Pork Breakfast Sausage

Do you read the package labels as shop for groceries? It always amazes me how many crazy ingredients are unnecessarily added to the food we buy! Honey Wheat Bagels should not contain high fructose corn syrup, they should be sweetened with honey!! Pork Breakfast Sausage should not contain corn syrup, or dextrose, and definitely not MSG!!
It becomes very difficult, very quickly to find Pork Breakfast Sausage that is sugar-free if you are following any type of Whole30, Paleo, or Keto plan. There are a few companies out there happy to oblige, but the cost is almost as scary as the list of ingredients in Jimmy Dean sausage! lol
Today we will be making a crumbled Pork Breakfast Sausage recipe that can be used in different recipes throughout the week. You can also make sausage patties if you prefer, I will include those instructions as well. 🙂
How to make Pork Breakfast Sausage:
In a large bowl, mix together all of the sausage ingredients…..
Heat a large non-stick skillet over medium heat. If using very lean pork, add 1 Tablespoon of olive oil.
Add the sausage mixture to the skillet and break apart with a spatula or wooden spoon…..
Thoroughly cook the sausage until no longer pink.
Mix with scrambled eggs and greens, or allow to cool and use in your favorite recipes…like this Sausage Egg Casserole…..
How to make Pork Breakfast Sausage Patties:
Mix all of the sausage ingredients together in a large bowl.
Divide the mixture into 1/4 cup portions. Place them on a sheet of parchment paper and flatten into 2 1/2 by 1/2-in circles. Cut the parchment paper between each patty to separate them…..

Heat 1 Tablespoon of oil in the same non-stick skillet. Add 4 patties and cook halfway…..
then flip over and continue cooking until cooked through (165 degrees)…..
Remove from skillet and cook the remaining sausage patties.
Serve along side your favorite breakfast foods…..
Same concept, different flavors…crazy delicious!!
Notes:
- Yes, you can substitute chicken for the pork.
- If your sausage is marked extra-lean, it will probably stick to the pan if you do not add oil.

Ingredients
- 1 pound ground pork
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon dry mustard powder
- 1 teaspoon dried sage
- 2 Tablespoons chopped, Italian parsley
- 1 Tablespoon olive oil (to cook the sausage)
- sea salt & black pepper (to taste)
