Air Fryer Bruschetta Cod

Air Fryer Bruschetta Cod is a flavorful, healthy meal that you can get on the table in under 20 minutes! Fresh cod filet topped with cherry tomatoes, fresh basil, red onion, lemon juice, and a bit of olive oil. It is Whole30, Paleo, and Keto friendly too!

This recipe is crazy simple to prepare with light, bright flavors that will not weigh you down. It is the perfect way to use of all of those summer tomatoes!
Serve with cauliflower rice, cauliflower mash, steamed broccoli, or side of your choice. You can also drizzle with balsamic glaze for an added boost of flavor, or add chunks of avocado to the bruschetta mixture.
What you will need:
- Wild-caught cod filets that are 1-inch thick – I used defrosted cod out of my freezer. Try to find fillets that are similar size so they cook evenly.
- Cherry tomatoes – Multicolored tomatoes add a burst of color, but regular red tomatoes work just fine.
- Fresh basil – this is non-negotiable, you need to use fresh for the best flavor!
- Red onion – small diced onion adds a tangy bite to your bruschetta.
- Lemon juice to brighten the flavors and give it a bit of a zing.
- Olive oil is used to brush on the fish before cooking, and tossed with the bruschetta.
- Sea salt and black pepper bring out the flavors of the vegetables.
How to air fry cod:
Brush 2 tablespoons of olive oil over the cod filets, then sprinkle with salt and pepper.
Set your air fryer to 7 minutes at 400 degrees on Air Fry and allow to preheat.
Add the seasoned filets when the air fryer displays “Add Food”, and close the basket. Do not flip the fish halfway through cooking, it is too fragile and will fall apart.
How to make Bruschetta topping:
While the cod is cooking, toss the cherry tomato halves, with the sliced basil, 1 tablespoon of oil, lemon juice, salt and pepper.
When fish is cooked, remove from the air fryer and place on a serving plate.
Top cod with bruschetta mixture and serve.
Tender and flaky with just the right amount of seasonings.
Recipe Notes & Tips:
- For those of you that are opposed to using oil, you can skip it, but you run the risk of your fish drying out while cooking. It is being cooked with moving, hot air.
- If your cod filets are thinner than 1-inch, reduce the cooking time about 2 minutes per quarter inch. You can always put it back in if it is not done, but you cannot un-cook fish.
- Cook cod until the internal temperature reaches 145 degrees with an instant read thermometer.
- Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the air fryer for 5 minutes at 280 degrees.
How to chiffonade fresh basil:
Neatly stack several fresh basil leaves on top of each other on a cutting board.
Tightly roll the stack into a cylinder shape in either direction, long side or the short side.
Slice the cylinder into thin strips with a sharp knife.
Separate the strips with your fingers.
You can cut any flat-leafed herb or leafy greens like spinach, kale (inner stem removed), or Swiss chard. Chiffonade is a fancy word that simply means to cut into “thinly sliced ribbons”.
How to bake cod in the oven:
Preheat oven to 400 degrees.
Place cod in a baking dish or on a foil-lined baking sheet. Brush with 2 tablespoons of oil and sprinkle with salt and pepper.
Bake for 10 to 12 minutes, or less for thinner filets, to 145 degrees internal temperature. Fish should be opaque and flake easily with a fork
