During the hustle and bustle of creating a big holiday meal, I tend to forget the vegetables. I know, it’s horrible…but sadly true. My focus tends to be on the “star” of the meal, aka main course, and I tend to completely forget about the beautiful vegetables that are hiding in the refrigerator, LOL. Well this time I remembered, and you will not believe how incredibly easy these Simple Roasted Carrots are to prepare. …..
It’s almost comical how simple these directions are.
How to make Simple Roasted Carrots:
Preheat oven to 425 degrees. Line a baking sheet with parchment paper or foil.
Place carrots in a single layer on prepared baking sheet. Drizzle with olive oil, then sprinkle with thyme, salt and pepper…..
Place in the oven and bake until golden brown, about 25 to 35 minutes {depending on your oven}…..
See, I was not kidding about how easy they are to prepare!!
I wanted to highlight the natural sweetness of the carrots, and I couldn’t add any dairy…so olive oil is the perfect solution. I love thyme, it’s so versatile and adds a subtle flavor that will not overpower or take away from the carrots. I used dried thyme, but fresh would work really well too.
I was originally going to use the fancy carrots with the stems still attached, but I could not bring myself to pay $4.99 a pound…so good old regular carrots get to be the star today. 😉

Ingredients
- 2 pounds organic carrots peeled
- 2 Tablespoons olive oil
- 1 teaspoon dried thyme
- sea salt and ground black pepper to taste
Instructions
