Excuse me for a moment as I sound like a broken record, but O-M-G it is HOT here in Phoenix!! We have been over 100 degrees forever…okay maybe it just feels like forever, but this is seriously starting to get old, lol. Anything over 100 degrees is just not fun to be out in, dry heat or not, it is just stupid hot out there!! That’s where this delicious Coffee Cake in a Mug comes in…..
I don’t think I have used my oven since May, which means I have been dying for some baked goods. Cake sounded really good to me today, but turning on the oven was still out of the question, so I decided to get creative and make a fun Coffee Cake in a Mug complete with streusel topping….Aaaannnnddd it hit the spot perfectly!
How to make coffee cake in a mug:
I have no idea when or why I started making mug cakes in this particular order, but it works for me. Melt butter in the microwave…..
Add the sugar, flour, baking powder, and cinnamon…..
Pour in the milk and vanilla, and whisk/stir to combine. Pour into a mug and set aside…..
In a small bowl, combine flour, butter, cinnamon, and brown sugar together with a fork until thoroughly mixed together…..
Sprinkle streusel over the cake mixture in the mug. Cook in the microwave for 1 minute 25 seconds {for 1000 watt ovens}. Carefully remove from oven and allow to cool slightly before eating. 🙂
I am having fun getting creative, and at least I won’t have to shovel snow this winter, it would just be nice to drop down to the 80’s so I can cook inside again. 😉
My microwave is 1000 watts, so you may need to adjust your cooking time. I would try 10 second increments until you get it right.

Coffee Cake in a Mug
Ingredients
- 2 Tablespoons unsalted butter
- ¼ cup + 2 Tablespoons all-purpose flour
- 2 Tablespoons granulated sugar
- ¼ teaspoon baking powder
- ¼ teaspoon ground cinnamon
- ¼ cup milk I used unsweetened cashew milk
- ½ teaspoon pure vanilla extract
Streusel Topping
- 1 Tablespoon unsalted butter softened
- 2 Tablespoons all-purpose flour
- 1 Tablespoon dark brown sugar
- ¼ teaspoon ground cinnamon
Instructions
- Melt butter in microwave.
- Add the sugar, flour, baking powder, and cinnamon.
- Pour in the milk and vanilla, and whisk/stir to combine. Pour into a mug and set aside.
- In a small bowl, combine flour, butter, cinnamon, and brown sugar together with a fork until thoroughly mixed together.

i cooked it for 1 hour and 25 minutes and it was burnt 🙁
Yes, 1 hour and 25 minutes is way too long.
The directions say “Cook in the microwave for 1 minute 25 seconds {for 1000 watt ovens}.” Only special items would be cooked an hour. i.e. thawing meat on the THAW setting. Did you use a conventional oven????
Next time, try it for 1 minute and 25 seconds, not 1 hour and 25 seconds. It should be super yummy then!!
