Adobo Slow Cooker Chicken

I am so excited to share this recipe with all of you, and a bit embarrassed to admit that I am still trying to figure out exactly what you are supposed to do with a slow cooker. I did not grow up eating slow cooker meals, so they are still a a bit of a foreign concept…but now I want to learn more!! This Adobo Slow Cooker Chicken is a recipe that I got from…..
my son’s girlfriend Kristin. She started laughing when I asked her for the recipe, because there really isn’t one.
This all started in a facebook messenger conversation a few weeks ago. I was working on my Chipotle Ranch Dressing post, and she was eating Adobo Slow Cooker Chicken. Oooh, that sounds good…so she proceeds to tell me it’s just a pound or so of chicken breasts, Adobo and turmeric seasoning, and a can or two of chiles cooked for two hours in a slow cooker. Wait, what? It’s really that easy? What on earth is Adobo seasoning?? 😉
She posted a picture and I walked down the Mexican food aisle at the grocery store looking at all the different varieties, there are several, and started tossing everything into my cart. I did go a bit rogue and added diced tomatoes, but I’ll get to those in a minute.
How to make Adobo Slow Cooker Chicken:
Place chicken breasts inside slow cooker…..
My grocery store sells them in 1 1/2 pound packages, so that’s what I used.
Sprinkle chicken with Adobo and turmeric seasonings. Flip over and sprinkle the other side…..
My turmeric does not have a shaker top so I just sprinkled it over the chicken with a spoon so it looks splotchy.
Pour diced chiles and tomatoes over the chicken and give them a bit of a stir to spread the flavors around…..
Cover slow cooker and cook on HIGH for two hours…..
Shred chicken with two forks…..
and place back in the crock pot. Stir to combine with the juices….
Serve over rice or use as a taco filling…..
O-M-G it is soooo good! The first day, I poured it over Steamed Rice with no toppings. The second day, I added the Greek yogurt and sliced avocados and it was even better. Next time I will try it as a taco filling, or maybe a quesadilla, or on top of chips. 🙂
Notes:
- This truly is a no recipe recipe, so get creative.
- Kristin uses hot chiles, but she’s half Mexican and loves spicy food!! I am a wuss and choose to use mild. She also uses 2 cans of chiles and no tomatoes.
- Make sure you check your chicken to make sure it is cooked thoroughly. If not, put the lid back on and continue cooking.
- Kristin also tops hers with a little Topatio hot sauce and Tajin Clasico Seasoning.
- For Paleo/Whole30 – serve over Cauliflower Rice or in lettuce leaves…and ignore the Greek yogurt in the picture!

Adobo Slow Cooker Chicken
Ingredients
- 1 ½ pounds boneless, skinless chicken breasts
- 1 Tablespoon GOYA Adobo all purpose seasoning with pepper
- 1 Tablespoon turmeric
- 14.4 ounce can diced tomatoes
- 7 ounce can fire roasted diced green chiles
Instructions
- Place chicken breasts inside slow cooker.
- Sprinkle chicken with Adobo and turmeric seasonings. Flip over and sprinkle the other side.

- Cover slow cooker and cook on HIGH for two hours.
