Very Berry Cobbler

You would think that summer had already arrived ,with all of the huge fruit displays at the grocery store. I opted to go with red, white, and blue color scheme of berries to create this crazy delicious, Very Berry Cobbler…just in time for Memorial Day. Serve it with a big scoop of vanilla ice cream and you have the perfect summer dessert…..
This Very Berry Cobbler is bursting with flavor from the fresh blueberries, raspberries, blackberries, and cherries! No, I do not know where that name came from, but I couldn’t get it out of my head!!
How to make Very Berry Cobbler:
Preheat oven to 400 degrees. Grease an 8 x 8 baking dish* with 1 Tablespoon of butter, set aside.
To make the Filling:
Whisk sugar, salt, cornstarch, and zest together in a large bowl. Add the berries and cherries and toss to coat…..
Stir in vanilla and lemon juice…..
Pour into prepared baking dish…..
To make the Topping:
Mix sugar, zest, flour, baking powder, and salt together in a medium sized bowl. Cut in the butter using a pastry cutter or two forks until pea-sized lumps form…..
Stir in the milk until it forms a soft dough…..
Spoon the dough evenly over the berry filling…..
Sprinkle 1 Tablespoon of sugar over the topping. Bake until golden and bubbling, about 35 minutes…..
Allow to cool slightly and serve with Vanilla Ice Cream. Your family and friends will love you!!
Notes:
- I used a 2 quart oval baking dish, not an 8 x 8. I wanted something a bit more “blog worthy”. As long as it is similar in size, it will work.

- ½ cup granulated sugar
- ¼ teaspoon fine sea salt
- 2 Tablespoons cornstarch
- 1 teaspoon orange zest
- 4 cups fresh berries blueberries, blackberries, raspberries
- 1 cup fresh red cherries pitted
- 1 teaspoon pure vanilla extract
- ½ teaspoon fresh lemon juice
Topping
- 1 cup all-purpose flour
- 2 Tablespoons granulated sugar
- 1 teaspoon orange zest
- 1 ½ teaspoon baking powder
- ½ teaspoon fine sea salt
- 3 Tablespoons unsalted butter
- ½ cup cashewmilk or whole milk
- 1 Tablespoon sugar to sprinkle over topping
