White Chocolate Champagne Cupcakes

The celebration continues this week, with these delicious White Chocolate Champagne Cupcakes. You cannot possibly be surprised that I made cupcakes with alcohol to celebrate, right? I have always wanted to make a simple, champagne cupcake and today seemed like the perfect excuse. Today is my actual Two Year Blogiversary!! As cocktail cakes go, this one is a little bit too subtle for me…..
The main reason why I use alcohol in my cakes is for intense flavor. But…..since Champagne is not a favorite of mine, in fact I don’t even like it, that may have actually worked in my favor!
The white chocolate is also a very subtle flavor, so these cupcakes would be perfect for just about everyone! I bet most people would never even guess that there is alcohol in them…..
As with all of my other cocktail cakes, they are super simple to make!
How to make White Chocolate Champagne Cupcakes:
Preheat oven to 350 degrees. Line muffin tin with wrapper, or spray with baking spray. {You can also bake in a bundt pan if you prefer}. In a large bowl, beat together sugar, oil, and eggs until light and fluffy…..
Add the champagne and stir to combine…..
Add the flour, baking powder, salt, dry milk powder, and pudding mix and beat to combine…..
Fill wrappers or muffins tins 2/3 to 3/4 full…..
Bake for 18 to 21 minutes, until toothpick comes out clean when inserted into the center of cupcake…..
Allow to cool for 5 to 10 minutes in the pan. Place on a wire cooling rack and allow to cool completely.
Make a batch of Buttercream Frosting but substitute Godiva White Chocolate Liqueur for the vanilla and milk/water to thin to desired consistency…..
The only decorating tip that has not been eaten by the garbage disposal {yet} is this Wilton 2D tip…..
It made a shredded ribbon effect on top of my cupcakes, lol. The tip separated the frosting into strips as I worked my way around, but still looks kind of cool. I decided to decorate the top of my cupcakes with shaved Lindt White Chocolate bars…..
and blue and white snowflake sprinkles…..
It might even be fun to drizzle melted white chocolate over the top! Blogger brain at work.
My original plan was to go with a gold and white theme more geared towards New Years, but then I saw these cute blue and white snowflake wrappers and changed my mind. The snow falling outside may have swayed my decision a bit as well. 😉

White Chocolate Champagne Cupcakes
Ingredients
- 1 ¼ Cups super fine sugar
- 4 Large eggs at room temperature
- ½ cup sunflower or canola oil
- 1 teaspoon pure vanilla extract
- 1 cup sweet Champagne
- 2 ½ Cups cake flour
- 2 Teaspoons baking powder
- 1 teaspoon salt
- ¼ cup non-fat dry milk powder
- 3.4 Ounce white chocolate instant pudding mix 1 package
- 1 Batch Buttercream Frosting*
- white chocolate shavings or sprinkles of your choice
Instructions
- Preheat oven to 350 degrees. Line muffin tin with wrappers, or spray with baking spray. Set aside.
- In a large bowl, beat together sugar, oil, and eggs until light and fluffy.
- Add the champagne and stir to combine.
- Add the flour, baking powder, salt, dry milk powder, and pudding mix. Beat to combine.
- Fill wrappers 2/3 to 3/4 full.
- Bake in preheated oven for 18 to 21 minutes, or until toothpick comes out clean when inserted into the center of cupcake.
- Allow to cool in the muffin tins for 5 to 10 minutes. Place on a wire cooling rack and allow to cool completely.
- Frost with Champagne Buttercream and decorate with sprinkles, drizzled melted chocolate, or white chocolate shavings.

I always learn something new from you! I had no idea there was Godiva white chocolate liqueur, or that you could just swap it out with vanilla. I actually do like champagne, but I can only drink a little before it give me a headache, so this is a perfect way to use the leftover. I think they are very elegant… would be perfect for a winter wedding:)
