Chicken and Rice Soup

Are you snowed in from the Great Blizzard of 2016? I obviously am not, I am in Arizona, but my facebook feed is filled with with some of the craziest videos and photos! Mounds and mounds of snow…everywhere! Well if you are snowed in, or just hungry, this Chicken and Rice Soup is the perfect way to warm up…..

and you probably have all of the ingredients in your refrigerator and pantry…score!! Are you watching the big game? No? Me either, although it looks like I am going to be creating a new Broncos Cocktail next week. 😉

Back to the Chicken and Rice Soup…this soup is loaded with flavor and healthy carrots, kale, tomatoes, and celery to keep your healthy enough to shovel snow, lol.

In a large pot or Dutch oven, heat oil over medium-high heat. Add the onions, carrots, and celery and cook until softened, three to four minutes…..

We just want to cook them long enough to soften them up and give them some additional flavor.

Add the garlic, stir and cook for one additional minute to heat. We want to heat the garlic to release the oils, but not cook long enough for them to burn . 😉

Pour in the Chicken Stock and add the thyme. {if you have fresh that’s awesome, I can’t keep mine alive} Stir to combine and heat for three or four minutes…..

When the stock is hot, add the tomatoes, rice, and kale. Stir to combine and heat to desired temperature…..

Season with sea salt and ground pepper to taste. Serve garnished with chopped parsley and Parmesan cheese* {if desired}…..

My daughter has requested recipes that use frozen chicken breasts that are easy and cheap for college students to make. I think this Chicken and Rice Soup fits that criteria, however it can also be make using leftover rotisserie chicken…that’s what I used. 😉

*to keep your soup dairy-free, substitute Nutritional Yeast Flakes or just eliminate the Parmesan cheese.

Chicken and Rice Soup

Warm up this winter with a big bowl of Chicken and Rice Soup, loaded with carrots, kale, and tomatoes for the perfect hearty meal.

Ingredients

  • 2 Tablespoons olive oil
  • 3/4 cups diced, yellow onion (half of a large onion)
  • 3/4 cups thinly sliced celery (about 2 stalks)
  • 3/4 cups thinly sliced carrots (2 large)
  • 3 Large cloves garlic, diced or minced
  • 8 Cups chicken stock
  • 1 teaspoon dried thyme (or 1 tablespoon fresh)
  • 1 can whole, peeled tomatoes (drained and broken apart)
  • 1 cup cooked, chicken chunks
  • 1 1/2 Cups chopped kale leaves (stems removed)
  • 2 Cups cooked rice
  • chopped parsley (to garnish)
  • grated Parmesan cheese (to garnish)
  • sea salt and ground pepper to taste

Directions

In a large pot or Dutch oven, heat oil over medium-high heat.
Add the onions, carrots, and celery and cook until softened, three to four minutes.
Add the garlic, stir and cook for one additional minute to heat.
Pour in the chicken stock and add the thyme. Stir to combine and heat for three or four minutes.
When the stock is hot, add the tomatoes, rice, and kale. Stir to combine and heat to desired temperature.
Season with sea salt and ground pepper to taste.
Serve garnished with chopped parsley and Parmesan cheese* {if desired}.

Note

*for dairy-free, sprinkle with Nutritional Yeast Flakes.
