Did you know that it is National Pizza Week??? Why do I not know when these things are ahead of time? I was determined to get a pizza recipe on here sick or not dagnamit! Luckily this BBQ Chicken Pizza is a breeze to make. I have no idea how to make pizza dough without a bread machine. I have never tried it, nor do I feel the need to.

{Update: I have since made pizza dough in a stand mixer, but I still prefer to use my bread machine ;)} It is so simple to make Homemade Pizza Dough with a bread machine, and they are so inexpensive that I have no incentive to change my lazy ways. Each bread machine is different so please place the ingredients into your machine based on the manufacturer’s instructions. Mine is a older version of this Bread Machine {affiliate link} and all liquids go in first, then the dry ingredients.

How to make BBQ Chicken Pizza:

Preheat oven to 500 degrees. If using a Baking/Pizza Stone, {affiliate link} place in oven while heating and allow to heat for at least 15 – 20 minutes. I prefer to heat mine for 1 hour to get it nice and hot!

Place rolled dough on a cornmeal or parchment paper covered pizza peel, or flat baking sheet if using a pizza stone. Pour barbecue sauce onto dough and spread around with a large spoon….

Place shredded chicken on top of sauce. Cover chicken with a layer of mozzarella cheese {or a combination of mozzarella and sharp cheddar}…..

Ingredients

  • 1 pound homemade pizza dough
  • 1 cup barbecue sauce
  • 2 ½ cups shredded chicken rotisserie is perfect
  • 1 cup grated or pearl mozzarella cheese
  • ½ red onion cut into slices
  • ½ cup freshly grated Parmesan cheese
  • 3 Tablespoons fresh cilantro leaves chopped

Instructions

  • Preheat oven to 500 degrees. If using a pizza stone, place in oven while heating and allow to heat for at least 15 - 20 minutes. I prefer to heat mine for 1 hour to get it nice and hot!
  • Place rolled dough on a cornmeal or parchment paper covered pizza peel, or flat baking sheet if using a pizza stone.
  • Pour sauce onto dough and spread around with a large spoon.
  • Place shredded chicken on top of sauce.
  • Cover chicken with a layer of mozzarella cheese. or a combination of mozzarella and sharp cheddar.
  • Add onion slices.
  • Sprinkle with grated Parmesan cheese.
  • Place in preheated oven and cook for 8 - 10 minutes, until golden brown and the cheese is bubbling.
  • Remove from oven and sprinkle with cilantro. Allow pizza to cool for 10 minutes before cutting, this helps keep the cheese from sliding off.

Notes

  • The amounts of ingredients are approximate, it really depends on your tastes. You might want a very saucy pizza, or extra cheese.
  • Rice Shreds work really well for those who cannot tolerate dairy.
  • I prefer a sweet tasting barbecue sauce for this pizza, but again choose based on your personal taste preference.
