Instant Pot Barbecue Beef Sandwiches

Do you ever get an idea for a recipe that you just have to try? These Instant Pot Barbecue Beef Sandwiches are that idea for me! I created a round up post last week, 20 Instant Pot Recipes to Beat the Heat, and I mentioned under the Pot Roast link that it would be really easy to convert to a barbecue beef recipe and then I couldn’t get the idea out of my head.

I am soooooo glad that I gave it a try, these Instant Pot Barbecue Beef Sandwiches are A-M-A-Z-I-N-G!! Not only that, they are crazy easy to make too which makes them perfect for busy weeknights or lazy summer days.

How to make Instant Pot Barbecue Beef Sandwiches:

Plug in Instant Pot and set to Saute. Sprinkle the beef pieces with Southwest Seasoning {or seasoning of your choice}…..

When the display reads “HOT”, add olive oil to the Instant Pot liner and swirl it around the bottom. Add two of the seasoned beef pieces to the pot and sear on all four sides…..

Remove and set aside on a plate. Sear the additional beef and place on the plate.

Add the beef stock to the liner, it will steam up, and scrape the bottom to remove the stuck on bits.

Add the beef back to the liner and pour 1 cup of barbecue sauce on top…..

Cancel the Saute function. Secure the lid and check that the knob is in the Sealing position.

Press Meat or Manual and adjust the time to 60 minutes…..

Recipe Notes:

  • To make this recipe super fast, use store bought barbecue sauce and hamburger buns.
  • The amount of time that the pressure cooker take to build and release steam is not included in the total time. It can vary based on temperature of ingredients, etc.
  • I used provolone because I wanted a change, and because I thought the bright orange cheddar might look strange in the photos. Use whatever cheese your family prefers.
  • The meat is so tender it practically shreds itself!

Ingredients

  • 3 pounds beef chuck roast (cut into 4 pieces)
  • 1 tablespoon Southwest seasoning
  • 1 tablespoon olive oil
  • .5 cup beef stock (or broth)
  • 1.5 cups barbecue sauce (divided)
  • 8 slices cheese (I used Provolone)
  • 8 hamburger buns (sliced and toasted)

  2. Making this right now! When you say manually release gor 15 minutes for you mean let it sit for 15 and then quick release after that? Thanks!

  3. I will definitely try this. But I think Homemade burgers are better. Even if you make them from nothing but salt and pepper and good-quality meat, they will beat anything in the shops.
