Caprese Bites

Summer is in full swing and impromptu gatherings with friends and family are what make summer fun. These fun and delicious Caprese Bites are easy party appetizers sure to impress your guests!

They are simple to make and hard to resist! I mean seriously, how cute are those?

You know how it goes….someone mentions getting together, or their A/C is on the fritz, and then somehow it turns into a party at your house…in 2 hours! No worries, you got this.

What you’ll need

  • A box of Triscuit Original Crackers 
  • A jar of Basil Pesto – if you don’t have some already made at home.
  • Mozzarella pearls – they are sold in small container filled with water in the deli section.
  • Grape or cherry tomatoes
  • Fresh basil leaves

How to make Triscuit Caprese Bites

Place a dollop/teaspoon of basil pesto on top of each cracker.

I did not measure, I just eyeballed it. Now top each bite with a mozzarella pearl, a grape tomato half, and garnish with a basil leaf.

It will take about 30 minutes to prepare 50 caprese bites, slicing the tomatoes is the hardest part…I need a sharper knife.

Place your caprese bites on a serving platter and you are ready to party!!

Are you wondering how I came up with “50” as the magic number for this shindig? There are approximately 54 Triscuit Crackers in each box. With “5” as the serving size, that will give you 50 bites (ten servings) with a couple of crackers left over for nibbling.

This recipe can be easily adjusted up or down depending on your needs.

The basil pesto soaks into the Triscuit Crackers and pops with the flavor of the tomato and mozzarella. So delicious!!

Recipe Notes & tips

  • If you cannot find mozzarella pearls, simply cut fresh mozzarella into cubes.
  • Substitute crostini for the crackers and sliced, fresh mozzarella for the pearls for an equally delicious option.

Ingredients

  • 50 Triscuit Crackers
  • 1 cup basil pesto
  • 25 grape tomatoes cut in half
  • 50 mozzarella pearls
  • 50 small basil leaves

Instructions

  • Place a dollop, about a teaspoon, of pesto on top of each Triscuit Cracker.
  • Top with mozzarella pearl and tomato half.
  • Garnish with basil leaf and serve.
