I mean seriously, how cute are those?

You know how it goes….someone mentions getting together, or their A/C is on the fritz, and then somehow it turns into a party at your house…in 2 hours! No worries, you got this. 😉

Drive down to your local grocery store and head for the Cracker Aisle. Grab a box of TRISCUIT Original Crackers and a box of TRISCUIT Smoked Gouda Crackers. Now grab a jar of Basil Pesto {if you don’t have some already made at home}, some mozzarella pearls, grape tomatoes, and some fresh basil leaves.

How to make TomatoPestoCheeseCuit aka Caprese Bites:

Place a dollop/teaspoon of basil pesto on top of each cracker…..

I did not measure, I just eyeballed it. Now top each bite with a mozzarella pearl, a grape tomato half, and garnish with a basil leaf…..

It will take about 30 minutes to prepare 50 TomatoPestoCheesecuit bites, slicing the tomatoes is the hardest part…I need a sharper knife. 😉

Place your TomatoPestoCheesecuit bites on a serving platter and you are ready to party!!

Are you wondering how I came up with “50” as the magic number for this shindig? There are approximately 54 TRISCUIT Crackers in each box. With “5” as the serving size, that will give you 50 bites (ten servings) with a couple of crackers left over for nibbling, lol This recipe can be easily adjusted up or down depending on your needs.

What are you waiting for, start filling your plate…..

Grab a plate, you are going to love these TomatoPestoCheesecuit {aka Caprese Bites} appetizers! cookingwithcurls.com

The basil pesto soaks into the TRISCUIT Crackers and pops with the flavor of the tomato and mozzarella. So delicious!!

Note:

  • If you cannot find mozzarella pearls, simply cut fresh mozzarella into cubes.

Now I am craving pesto. Luckily I think my basil plant needs a good trim. Thanks for sharing on Creative K Kids Tasty Tuesdays.
