Recipe inspiration

When I joined Thrive Market last summer, I decided to try several healthy, yet bizarre food items. One of those was Salsa Verde Popcorn, well actually it is Living Intentions Activated Superfood Popcorn,(affiliate link) but I didn’t like that title. In fact, I didn’t really “love” the popcorn either. It tastes too “spinachy” to me.

Obviously when you use Green Superfood as an ingredient you are bound to have it turn out tasting a bit like grass, but I knew that I could do better!!

I still have no idea how they get their popcorn perfectly round, I was more concerned with the flavor than the shape of the popcorn. I used a few unique ingredients to obtain the flavor and it turned out amazing!

Microwave Method: Place one-third cup of popcorn kernels in a brown lunch bag and microwave for 3.5 minutes, or use the popcorn button. I usually make two batches and snack on the leftovers.

How to make Salsa Verde Popcorn

Mix the green superfood, onion powder, garlic powder, jalapeño powder, ground coriander, lime juice powder, salt and pepper together in a small bowl and set aside.

Place popcorn in a large bowl. Sprinkle popcorn with half of the seasoning mixture, and toss.

Drizzle with oil and melted butter, then sprinkle with remaining seasoning mixture. Toss to combine. Serve immediately.

Serve with a cooling beverage, this Salsa Verde Popcorn packs a punch!! 0.5-teaspoon of jalapeño powder sent me into a coughing fit. A .25-teaspoon still has quite a bit of heat and would probably make most 5 year old’s cry, so I decided to cut back on the white pepper. Third time is the charm Goldie Locks, it is just right!

Stovetop Method: Pour 3 tablespoons of oil and 0.5-cup of popcorn kernels into a 4-quart pot. Cover pot with lid leaving it slightly ajar so the steam can escape. Cook popcorn over medium heat shaking the pan frequently. When popping slows, remove the the pot from heat.

Recipe Notes & Tips

  • For more heat, add more white pepper and jalapeño powder.
  • For less heat, omit the white pepper and decrease the jalapeño powder.
  • The lime juice powder brightens up the flavor and takes the edge off the “grassy” flavor. Crushed lemon peel may also work, though I have not tried it.
  • Store leftover popcorn in an airtight container at room temperature for up to 3 days. Popcorn starts to get chewy the longer it sits.
