I mentioned the other day that we are entering the busy holiday season, and that I have appetizer recipes bouncing around in my head! Actually, I can’t really think about anything else. I know I should figure out what to eat for dinner this week, but I couldn’t get past my desire to create Salsa Verde Popcorn…or should I say recreate?

When I joined Thrive Market last summer, I decided to try several healthy, yet bizarre food items. One of those was Salsa Verde Popcorn, well actually it is Living Intentions Activated Superfood Popcorn,{affiliate link} but I didn’t like that title, LOL. In fact, I didn’t really “love” the popcorn either. It tastes to “spinachy” to me.

Obviously when you use Green Superfood as an ingredient you are bound to have it turn out tasting a bit like grass, but I knew that I could do better!!

I still have no idea how they get their popcorn perfectly round, I was more concerned with the flavor than the shape of the popcorn. 😉 I used a few unique ingredients to obtain the flavor, and I will link to them below so you can find them as well.

Pop your popcorn and set it aside. Mix the green superfood, onion powder, garlic powder, jalapeno powder, ground coriander, lime juice powder, salt and pepper together in a small bowl and set aside…..

Pour the melted butter and olive oil over the popcorn and toss to coat…..

Sprinkle the seasoning mixture over the popcorn and toss until thoroughly coated…..

Serve with a cooling beverage, this Salsa Verde Popcorn packs a punch!! 1/2 teaspoon of jalapeno powder sent me into a coughing fit. A 1/4 teaspoon still has quite a bit of heat and would probably make most 5 year old’s cry, so I decided to cut back on the white pepper. Third time is the charm Goldie Locks, it is just right!

Notes:

  • For more heat, add more white pepper and jalapeno powder.
  • For less heat, omit the white pepper and decrease the jalapeno powder.
  • I popped my popcorn in the microwave; 1/3 cup for 2 minutes on HIGH, but each microwave is different.
  • When I measure, I scoop the powder and shake it a bit to level it off. I do not scrape it smooth across the top of the spoon.
  • The lime juice powder brightens up the flavor and takes the edge off the “grassy” flavor. Crushed lemon peel may also work, though I have not tried it.

Tantalizing, spicy, and unexpected are the best ways to describe this Salsa Verde Popcorn...and of course, crazy delicious!

Ingredients

  • 8 cups popped popcorn
  • 2 Tablespoons unsalted butter, melted
  • 1 Tablespoon extra virgin olive oil
  • 1 teaspoon Green Superfood
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon jalapeno powder {use more or less depending on spice tolerance}
  • 1/2 teaspoon ground corriander
  • 1 packet True Lime powder {.8 grams}
  • 1/8 teaspoon fine sea salt
  • pinch white pepper {use more for spicier popcorn}

Instructions

  • Pop the popcorn and set it aside.
  •  Mix the green superfood, onion powder, garlic powder, jalapeno powder, ground coriander, lime juice powder, salt and pepper together in a small bowl and set aside.
  • Pour the melted butter and olive oil over the popcorn and toss to coat.
  • Sprinkle the seasoning mixture over the popcorn and toss until thoroughly coated.
  • Serve immediately or store in a sealed container until ready to use.
