Are you ready for some footbaaaaaall? How about some football food? I am in full on football food mode over here, even though I know absolutely nothing about the game. I just like creating fun party foods and hanging out with friends. This Buffalo Chicken Pizza is another one of those ideas that popped into my head last year, and is finally making it's way to the party table.....
Doesn't that look delicious? Bubbly, melted mozzarella, celery sticks, Franks Buffalo Wing Sauce {holy crap that stuff is hot!!}, and some shredded rotisserie chicken make this pizza so simple to prepare!
For those of you that are still scared to play with yeast dough, you need to get over it!! Let me tell you the story of how insane my day was...while trying to prepare this pizza. I put all of the ingredients in the bread machine to make my Homemade Pizza Dough. The machine beeped, but I was on the phone.....so the dough sat there for an extra hour or so.
How to make Buffalo Chicken Pizza:
I turned on the oven to preheat it to 500 degrees and place my pizza stone in the center, just like usual. I then cut the dough in half {I only wanted one Buffalo Chicken Pizza} and I rolled it out. I mixed the sauce and chicken together in a small bowl.....
I thought it might be a bit too much sauce, but I went with it anyway. I spread the chicken mixture on top of my pizza dough.....
Then the phone rang again. It was the financial planner that I needed to talk to so I answered it.....and talked.....and talked.....and talked for almost 2 hours. I got tons of information, but my chicken mixture has been sitting on the dough AND the oven had been preheating the entire time!!
I sprinkled some mozzarella cheese on top of the pizza {which this time around I put on parchment paper instead of using cornmeal} and placed it on top of a VERY hot pizza stone.....
That is the best crust that I have ever been able to bake at home!! I think I might always preheat the oven for 2 hours in the future, LOL I was loosing daylight, so I decided to cut the celery into thin strips and sprinkle them across the top of the pizza.....
I also chopped some Italian parsley for additional color, but that is totally optional. I ran over to the window and started taking pictures, then I remembered that people normally serve Buffalo chicken wings with blue cheese.....so I grabbed some crumbled blue cheese and dressing {it's actually Ranch....shhhh}.....
and voilà, Buffalo Chicken Pizza complete with celery and blue cheese.....just in time for the big game!
Those of you that have been around for a while know that I do not like spicy food, and I am flat out allergic to blue cheese. I do all of this for you, my lovely friends that do enjoy to burn your mouth off. 🙂
Soooo, I decided to try this Frank's Red Hot Wings sauce that I keep seeing all over the internet. BAD IDEA! O-M-G that is so insanely hot! I barely managed to swallow that one little bite. It's official, I am a total wuss! 😉

Buffalo Chicken Pizza
Ingredients
- 2 cups shredded or chopped chicken rotisserie is perfect
- ¾ cups Buffalo wing sauce I used Franks
- 1 cup shredded mozzarella cheese
- 1 stalk celery cut into thin strips
- crumbled blue cheese to garnish
- blue cheese dressing for dipping
- 1 pound pizza dough 1/2 batch of homemade dough
Instructions
- Place pizza stone in oven if using. Preheat oven to 500 degrees.
- Mix chicken and sauce together in a small bowl, set aside.
- Roll dough into a circle on a well floured work surface.
- Sprinkle pizza peel {or flat baking sheet} with corn meal or cover with parchment paper.
- Place the dough on top of pizza peel. Pour chicken mixture onto dough circle.
- Spread and adjust chicken pieces to completely cover the dough.
- Sprinkle with mozzarella cheese and bake in preheated oven for 10 to 12 minutes, until golden brown and bubbly.
- Remove from oven and garnish with celery sticks, chopped parsley, and crumbled blue cheese {if desired}.
- Serve with blue cheese or ranch dressing and lots of napkins.
Notes
- My Homemade Pizza Dough recipe is enough to make two medium pizzas (approximately 2 pounds of dough).
- Double the toppings ingredients if you would like both pizzas for a party.

It would have been awesome if that moment had been caught on camera!! Eyes getting huge, looking around for something to drink or eat to cool the burn! I so wish that I could like spicy food, but I don't think that will ever happen. 🙁
