Chicken Fajitas

Chicken Fajitas are delicious bundles of marinated chicken, onions, and bell peppers cooked to perfection in a skillet, then wrapped in a warm flour tortilla! Top them with salsa, Mexican crema or sour cream, and avocado…and you have the perfect meal!

Story behind this recipe:
I was originally planning to make Seafood Paella for this month’s Libra meal. Alex did not like that idea (I did ask his opinion) and he thought Chicken Fajitas sounded better. This is when the meal strayed into Mexican food territory, and I could no longer call it a Spanish meal and stick to my original theme. It is totally worth it!
What you need:
- Chicken breasts cut into 1/2-inch strips
- Lime juice
- Cumin, paprika and chili powder for the seasoning
- A large onion cut into thin strips
- 3 bell peppers – I used orange, yellow, and red
- Olive oil
- Fresh garlic cloves minced
- Toppings: avocado, guacamole, Mexican crema, sour cream, crumbled queso or cheese of your choice, and chopped cilantro
How to make Chicken Fajitas in a skillet:
Slice chicken breasts into 1/2-inch wide strips and place them in a large bowl.
Sprinkle the lime zest and juice, cumin, paprika, and chili powder over the chicken. Mix together, and allow to marinate for at least 30 minutes.
Thinly slice the onions.
Core, seed, and slice the bell peppers into thin, uniform strips.
Heat the oil in a large skillet. Stir-fry the marinated chicken for 5 – 6 minutes.
Add the onions and bell peppers and cook for an additional 3 – 4 minutes, or until the chicken is thoroughly cooked and the vegetables are soft and tender. Stir in the garlic and cook for one additional minute until fragrant.
Place the chicken fajitas in a large serving bowl.
Serve with heated tortillas and your favorite toppings.
Recipe Notes & Tips:
- Wrap tortillas tightly in foil and heat in a 400 degree oven for 10 minutes to warm them before serving.
- Drizzle lime juice over the fajitas for even more flavor.

Equipment

Ingredients
- 1.5 pounds chicken breasts boneless, skinless cut into strips
- 2 tablespoons lime juice 2 to 3 limes finely grated for zest, then juiced
- 1 teaspoon cumin
- 1 teaspoon paprika sweet or smoked
- 1 teaspoon chili powder
- 3 tablespoons olive oil
- 1 large onion thinly sliced
- 3 large bell peppers your choice of colors, thinly sliced

- 12 fajita sized flour tortillas
- Toppings: guacamole, salsa, sour cream, cheese optional
- .25 cup chopped cilantro
Instructions
