Avocado and Date Smoothie

We are finishing up our Cooking with Astrology “Scorpio” meal with a creamy, Avocado and Date Smoothie for breakfast. I searched and searched for a unique breakfast, and this one intrigued me the most. I will warn you, there are a lot of steps to this smoothie. I was not able to find blanched almonds, so I had to blanch them myself!

How to blanch almonds:

Boil water in a saucepan. Add the almonds and cook for one minute. Drain the almonds and dry with a towel. Squeeze the almonds out of their skins, carefully or they will shoot across the room, and you have blanched almonds…..

Pretty easy, right?

How to make an Avocado and Date Smoothie:

The next crazy step is cleaning the dates with orange water. Warning, it smells like industrial floor cleaner! I was too chicken to taste it…..it smells like industrial floor cleaner!

Wipe the dates with the orange flower water. Cut and remove the pits.

Let’s move on to the avocado. First you want to slice around the outside of the avocado with a knife…..

Then you want to “whack” the pit with your knife, and twist the pit to remove it. Next you are going to run a large spoon between the skin and the flesh of the avocado…..

and scoop it out. Super easy!

In a blender combine the dates, avocado, almonds, honey, and half of the milk. Puree until smooth.

Pour through a strainer into a bowl, pressing with the back of a wooden spoon to extract as much liquid as possible.

Stir in the remaining milk and 1 cup of cold water. Adjust sweetness by adding more honey if necessary.

Serve chilled.

Ingredients

  • 4 Medjoul dates
  • orange flower water
  • 1 large ripe avocado peeled and pitted
  • ½ cup blanched almonds
  • 1 quart milk I used coconut milk (box)
  • 1 Tablespoon honey

Instructions

  • Wipe the dates with the orange flower water. Cut and remove the pits.
  • In a blender combine the dates, avocado, almonds, honey, and half of the milk. Puree until smooth
  • Pour through a strainer into a bowl, pressing with the back of a wooden spoon to extract as much liquid as possible.
  • Stir in the remaining milk and 1 cup of cold water. Adjust sweetness by adding more honey if necessary.
  • Serve chilled.

  4. Hooray for Scorpios! =) I’ve actually never had an avocado smoothie, but I made some avocado pudding the other day and it ended up way tastier than I would have guessed. This looks like a fun combination!
