Jack O Lantern Cocktail

Have you ever heard the saying, “if it can go wrong it will”? That is a pretty good description of the past two weeks. It started with an insane cricket infestation…indoors!! So the buggy man came and made them go away…and now I can finally sleep…or so I thought 🙂 Then my mom came out last week to help me and kicked everything into high gear!! {this is a good thing}. This Jack O Lantern Cocktail is an even better thing!

I wish I had thought to take pictures, but there were two guys in the garage putting together cabinets and my barbecue grill. A plumber fixing the drain between the dishwasher and garbage disposal that was clogged, an A/C guy checking out the air conditioning to make sure everything was in working order, and an electrician giving a quote for adding some lighting…all at the same time!! It was complete chaos.

Four days later, the A/C died! So much for getting it checked out. 🙁 I heard a loud BANG and though someone had hit the house. Now in any other part of the country it wouldn’t be that big of a deal, but this is Arizona and it is still 107 degrees outside…and inside! 🙁 Needless to say, I have not been able to do anything in the kitchen for almost a week…it’s just too HOT!

So I have been sitting in front of my portable A/C unit thinking of things to make that do not produce any heat….COCKTAILS!!! I wanted to make a ZOMBIE, but I cannot buy passion fruit juice…anywhere!! So this is a twisted interpretation that I have named Jack O Lantern Cocktail, because I bought these really cute jack o lantern glasses. 🙂

How to make a jack o’ lantern cocktail:

Pour about a cup of ice into a cocktail shaker. Now pour in all of the ingredients…..

Shake to combine and pour into a cocktail glass…..

Fill with ice and serve with an orange wheel and straw…..

I’m not going to lie, these cocktails are brutal. To tone them down, add additional orange juice and lemonade…and be safe, don’t drink and drive. 🙂

Hopefully the warranty company will stop playing games and fix/replace the A/C so I can get back to work. Otherwise, I might have to make cocktails and ice cream recipes until the temperatures drop…in December! 😉 Update: they did not honor the warranty, they claimed it was pre-existing! Never, ever buy a home warranty from The Home Service Club!!

Ingredients

  • 1 ounce light rum
  • 1 ounce dark rum
  • 1 ounce 151
  • 1 ounce Cointreau orange liqueur
  • 3 ounces orange juice
  • 1 ½ ounce lemonade
  • ¼ ounce grenadine

Instructions

  • Place 1 cup of ice in a cocktail shaker.
  • Add all ingredients and shake to combine.
  • Pour into glass {jack o lantern or hurricane} and fill with ice.
  • Garnish with an orange wheel and straw, and serve.

  1. Ugh the A/C! I’m in Arizona too and ours went out this summer and had to be replaced! No fun! Hope it gets fixed quickly. Hopefully the cocktail helped, it looks relish! 🙂
