    Have you seen all of the Valentine's Day recipes plastered all over facebook and pinterest lately? Nothing like jumping from one holiday to the next at warp speed!! Chinese New Year comes before Valentine's Day people, we should be making healthy, Whole 30 versions of...okay I'll get back to you on that one, lol. Since I have not figured out how to make Sesame Chicken without sugar, honey, or all the other tasty ingredients, how about a Pomegranate Cherry Spritzer for Valentine's Day.....

    Have you ever tried seltzer water? I had not before my daughter came home for Christmas. She was really excited to find a generic {Kroger} brand of lemon flavored seltzer water, apparently she can only buy a name brand in Florida. After she went home I was left with half a box of these strange cans and decided to give one a try. Well, that was not what I was expecting!!

    Lemon seltzer water is just seltzer water with lemon flavoring. No sugar, no other ingredients of any kind...just lemon flavored bubbly water. I kept drinking just to see if I could get used to it, and low and behold I did! Crazy right? Since I am living on water during this Whole 30 adventure, having a different flavor has actually been kind of nice. 🙂

    Now it's time to come up with a Valentine's Day cocktail, but I can't drink it. You know what, I don't even miss it. So I decided to create a "mocktail" if you will that will fill the void on Valentine's Day, or any special occasion where you are looking for a non-alcoholic beverage....so the Pomegranate Cherry Spritzer was born, and it's crazy simple to make.

    How to make a Pomegranate Cherry Spritzer:

    Pour 1/4 cup of pomegranate cherry juice into two separate glasses.

    Top with 6 ounces of seltzer water.

    Garnish and serve immediately.....

    I tried making really cute lemon rind swirls, but that didn't work out so well. I finally went with bamboo skewered cherries. 🙂

    Notes:

    • If you do not like pomegranate juice, any juice will work...just make sure that it is 100% juice with no added sugar if you are Whole 30 or Paleo.
    • If you have no idea what Whole 30 or Paleo is, substitute sparkling wine for the seltzer water. 😉
    • Make sure your glasses hold at least 8.5 ounces, like the one I used above. {affiliate link} Champagne glasses would be fun as well IF you can find some that are large enough.

    I think I could get used to this mocktail thing...maybe...we'll see. 😉

    Ingredients

    • ½ cup POM Pomegranate Cherry Juice
    • 12 ounces chilled lemon flavored seltzer water or flavor of your choice
    • cherries and pomegranate seeds to garnish if desired
    Prevent your screen from going dark

    Instructions

    • Pour 1/4 cup of pomegranate cherry juice into two separate glasses.
    • Top with 6 ounces of seltzer water.
    • Garnish and serve immediately.
