With this simple recipe, you can skip the store-bought stuff and make your very own dressing at home!

What is Balsamic Vinaigrette made of?

  • good-quality balsamic vinegar – look for a small bottle of aged balsamic vinegar, not the jumbo bottle from a big box store.
  • red wine vinegar – this vinegar is aged for a shorter period of time which makes the flavor less sweet and bit more assertive than balsamic. Use all balsamic vinegar if you prefer.
  • extra-virgin olive oil – I love California Olive Ranch.
  • Dijon mustard – adds flavor and helps to emulsify the dressing.
  • shallot – adds an intense flavor to your dressing. Adjust the amount based on your own tastes.
  • fine sea salt – it will dissolve faster than a heavier salt.
  • fresh ground black pepper
  • fresh garlic – this is optional but could become overpowering. Add a small clove that has been pressed or very finely minced.

How to make balsamic vinaigrette dressing:

Whisk the shallot, mustard and salt together in a bowl.

Mustard, salt and minced shallots in a glass bowl.

Add the olive oil and whisk until the mustard and oil blend together.

Whisk in the balsamic and red wine vinegar and continue to combine until the dressing holds together.

Use immediately or store in the refrigerator until ready to serve.

  • This dressing will last for up to 7 days in an airtight container stored in the refrigerator.
  • If your dressing separates simply shake it together before using.

Ingredients

  • .25 cup minced shallot 1 large shallot
  • 1 tablespoon Dijon mustard regular or grainy
  • .25 teaspoon fine sea salt
  • .13 teaspoon ground black pepper 1/8 tsp
  • .5 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 3 tablespoons good quality balsamic vinegar
