What is Balsamic Vinaigrette made of?
- good-quality balsamic vinegar – look for a small bottle of aged balsamic vinegar, not the jumbo bottle from a big box store.
- red wine vinegar – this vinegar is aged for a shorter period of time which makes the flavor less sweet and bit more assertive than balsamic. Use all balsamic vinegar if you prefer.
- extra-virgin olive oil – I love California Olive Ranch.
- Dijon mustard – adds flavor and helps to emulsify the dressing.
- shallot – adds an intense flavor to your dressing. Adjust the amount based on your own tastes.
- fine sea salt – it will dissolve faster than a heavier salt.
- fresh ground black pepper
- fresh garlic – this is optional but could become overpowering. Add a small clove that has been pressed or very finely minced.
