I still believe that my Sausage Breakfast Stir-Fry is brilliant, though not easily turned into a processed, packaged oatmeal. How to make Pistachio Baklava Oatmeal:

I stuck with the tried and true “boil the water” method of preparation, but added some fresh orange zest…..

By cooking the orange zest in the water, it softens and ultimately blends with the oatmeal {so the kids will never be able to find it}.

Stir in oats. Cook for five minutes over medium heat, stirring occasionally…..

Holy Yum, Batman!! Not only is this Pistachio Baklava Oatmeal delicious, but it is also pretty healthy. Pistachios lower bad cholesterol and raise good cholesterol levels. They are also a good source of Vitamin B6, phosphorous, Vitamin E, and anti-oxidants.

I left out the butter {that would be weird} and added a bit of brown sugar to add a background flavor with a touch of sweetness. The honey adds another layer that blends perfectly with the orange, cinnamon, and pistachios. Did I mention that it doesn’t take hours to prepare like traditional baklava? 😉

Ingredients

  • 1 cup water
  • 1 Tablespoon fresh orange zest
  • ½ cup old fashioned oats
  • 1 teaspoon brown sugar
  • ½ teaspoon ground cinnamon
  • 1 Tablespoon chopped, roasted pistachios
  • 1 Tablespoon honey
