Do you ever crave something sweet and delicious, but you don’t want to eat an entire dessert by yourself? Or maybe you have a special dinner planned and don’t want a heavy dessert.  Well guess what, this Apple Crisp for Two is exactly what you need!! Crisp, tart apples baked with a sweet and crunchy topping and topped with a scoop of vanilla ice cream…..

How to make Apple Crisp for Two:

We start by using one of my favorite kitchen tools, the apple peeler, corer slicer!! It makes slicing apples a breeze. 🙂

Apple peels make me gag, so they have to be removed. Feel free to leave yours on if you like….I won’t judge. 😉

Mix brown sugar, flour, oats, cinnamon, nutmeg, and softened butter together in a small bowl. Stir in pecans and set aside…..

Place peeled, cored, and thinly sliced apples in a 6-inch mini skillet or cake pan…..

Sprinkle topping over apples…..

Bake in a preheated 375 degree oven until golden brown and bubbling, about 20 to 30 minutes. Remove from oven and allow to cool for 10 minutes…..

Notes:

  • If you don’t like pecans, just leave them out or substitute almonds or walnuts.
  • To make vegan, substitute coconut oil or vegan margarine.

Ingredients

  • 1/3 cup packed brown sugar
  • 1/4 cup all-purpose flour
  • 1/4 cup Old-fashioned oats
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 Tablespoons unsalted butter softened
  • 1/4 cup toasted chopped pecans
  • 2 Granny Smith apples peeled, cored, and thinly sliced
  • vanilla ice cream optional

Instructions

  • Mix brown sugar, flour, oats, cinnamon, nutmeg, and softened butter together in a small bowl. Stir in pecans and set aside.
  • Place peeled, cored, and thinly sliced apples in a 6-inch mini skillet or cake pan.
  • Sprinkle topping over apples.
  • Bake in a preheated 375 degree oven until golden brown and bubbling, about 20 to 30 minutes.
  • Remove from oven and allow to cool for 10 minutes.
