Several  months ago I posted the recipe for Slow Cooker Shredded Barbecue Chicken that I used to make sandwiches, and this crazy delicious Barbecue Chicken Pizza! The sandwiches and the pizza are both topped with a creamy yet crunchy Apple Coleslaw that pushes the flavor profile over the top…..

We have all had the “traditional” BBQ Chicken Pizza, but this Barbecue Chicken Pizza is extra special. It’s fun and unexpected…and did I mention delicious? 😉 It is also the perfect way to use up leftover rotisserie chicken or barbecue chicken from the sandwiches*. It’s almost as if I planned it that way, lol

How to make Barbecue Chicken Pizza:

If using a baking/pizza stone, place in cold oven and preheat oven to 500 degrees for one hour. If you are using a baking sheet, just preheat the oven 500 degrees.

Divide pizza dough in half. Roll each half into a circle on a floured work surface. Place each pizza on a sheet of parchment paper.

Mix shredded chicken and barbecue sauce together in a bowl. Divide chicken between the two pizzas…..

The amounts listed are more like guidelines…use as much or as little as you would like. Sprinkle evenly with the shredded cheese…..

I prefer aged white cheddar, but regular sharp cheddar works just as well.

Carefully slide pizza {including the parchment paper} onto the hot baking stone {or a baking sheet}.

Bake until crust is golden brown and the sauce is bubbly. Remove from oven and top with Apple Coleslaw…..

Slice and serve with lots of napkins…..

As the Apple Coleslaw starts to warm up it sort of melts onto the pizza and mixes with the barbecue sauce…so yummy…and so messy!! You could always serve the Apple Coleslaw on the side and let everyone put their own amount on top….if you’re not into messy. 😉
