Craving a delicious pub-style burger? You don’t have to go out to enjoy one! This mouthwatering meal is made with juicy ground beef patties, crispy bacon, cheddar cheese, and topped off with a flavorful whiskey aioli.

All of these ingredients are nestled between two soft and fluffy buns for the perfect bite. In just a few simple steps, you’ll be enjoying your very own homemade Irish Pub Burger in no time!

My dad was in town a couple of weeks ago and we ended up in an Irish pub for lunch. Not that I am complaining, it gives me great recipe ideas! These Irish Pub Burgers are inspired by the ones on the menu and you are going to love them!

What you will need to make this recipe

  • 85% ground chuck – half a pound per person per the menu description
  • Irish cheddar cheese – I went with regular sharp cheddar because that is all that was available
  • Grilled onions – thinly sliced yellow onion
  • Irish Whiskey aioli – Jameson mixed with mayonnaise and garlic, nice and simple
  • Irish rashers, aka thick cut bacon – again, I live in the desert not Europe
  • Hamburger bun of your choice – I used pretzel buns because they looked really pretty

How to make Irish Pub Burgers with Whiskey Aioli

To make the whiskey aioli:

Mix mayonnaise, whiskey, garlic, salt, pepper and paprika together in a small bowl.

Place in the refrigerator until ready to serve.

To caramelize the onions:

Heat one Tablespoon of oil in a large non-stick skillet over medium heat. Add the sliced onion and cook, stirring occasionally until golden brown…about 5 to 7 minutes. Remove from heat and set aside.

Optional: I added one Tablespoon of butter half-way through for added flavor. 

To make the burgers:

Form ground beef into patties and season with salt and pepper. Cover and cook over medium heat until no pink remains. Place cheese on top of burgers and allow to melt.

To assemble the burgers:

Place a cheeseburger patty on the bottom bun. Add the bacon and grilled onions. Drizzle with the whiskey aioli and top with bun.

Lettuce and tomato are optional, lol. OMG, these burgers are amazing!!! They are HUGE, but totally amazing. These are the kind of burgers that you serve to impress your friends!!

Recipe Notes

  • Yes you can make the aioli without the whiskey! Substitute lemon juice for the whiskey.
  • You can use Homemade mayonnaise or store-bought.
  • Any type of burger bun will work, Homemade or store-bought.
  • I used one, small onion for two burgers. The smaller onions have smaller rings that are easier to eat.
  • This recipe is very easy to double or triple!
  • For a smokier flavor, use smoked paprika. For a spicier flavor, substitute cayenne pepper.

Ingredients

Whiskey Aioli

  • 2 tablespoons mayonnaise homemade or store-bought
  • 0.5 tablespoon Irish whiskey I used Jameson – substitute lemon juice if desired
  • 1 small clove garlic pressed or finely minced
  • sea salt and pepper to taste
  • 0.13 teaspoon paprika 1/8th tsp. or add more to taste

Grilled Onions

  • 1 tablespoon olive oil
  • 1 small sweet, yellow onion thinly sliced

Burgers

  • 1 pound ground beef I used 85% grass-fed
  • sea salt and pepper to taste
  • 2 ounces cheddar cheese grated or sliced
  • 2 slices thick-cut bacon cooked and cut in half, or folded in half
  • 2 hamburger buns

Instructions

For the Aioli
