Fresh Berries Cookie Pizza

Show of hands, who is ready for Spring? Spring officially begins tomorrow, and I for one could not be happier!! I have just about had my fill of harsh Iowa winters, no matter how mild everyone claims this last one was. I am ready for warmth, and sunshine, and fun deserts like this Fresh Berries Cookie Pizza…..

Driscoll’s® provided compensation for the berries used in this post. All thoughts and comments are mine alone. #berriesofspring #springwithdriscolls

A giant Sugar Cookie topped with a lemony, cream cheese topping and mounds of fresh Driscoll’s® berries make any meal complete.

I’m sure you have all seen versions of cookie pizzas at those kitchen parties, right? Do any of you have the original recipe for that cookie pizza? Well I cannot for the life of me find the silly recipe, so I had to get creative. I am so glad that I did, this Fresh Berries Cookie Pizza is even better than the ones I remember!!

Spring Berries Cookie Pizza

The first change that I made, was making the sugar cookie from scratch rather than a tube from the refrigerator section. And yes, that sugar cookie post needs some updating love. 😉

I made the cookie dough, chilled it in the refrigerator, then rolled {as evenly as possible} the entire batch of dough out into a giant 13-inch cookie and placed it on a parchment paper lined baking sheet…..

I wanted the crust to be thick enough to hold up all of those delicious berries without breaking!! Bake in a preheated 400 degree oven for about 20 minutes, or until light, golden brown…..

Set cookie aside to cool completely.

In the meantime, go ahead and wash, drain, and dry your selection of Driscoll’s® berries…..

Fresh Berries Cookie Pizza with Driscoll's Berries

I chose strawberries, raspberries, blueberries, and blackberries. No bananas, mandarin oranges or chocolate syrup on this pizza, sorry. 😉 Try not to eat all of the yummy berries while they are sitting on the counter, we will need them later…..

In a large bowl, beat together the cream cheese and sugar until smooth and creamy. Add the vanilla and lemon zest, and beat to combine…..

The lemon zest adds a bright burst of flavor to the cream cheese frosting, and pairs perfectly with the berries. Spread the frosting on the cooled cookie…..

Then comes the hard part, the design!! I had a really cool design in my head that did not translate to the cookie pizza. So I removed the berries and tried again….yeah, this is not going to happen. I finally through caution to the wind {and closed my eyes} and scattered the berries over the top of the cookie…..
