Artichoke and White Bean Salad

It’s that time again….it’s time for this month’s Cooking with Astrology “Gemini” meal. We are starting this month’s meal with this healthy and delicious Artichoke and White Bean Salad. This salad could not be easier to make, and can be made ahead of time if you’re pressed for time.
The body part ruled by Gemini, is the lungs. Each portion of this month’s meal will be beneficial to the lungs and keeping our Gemini friends talking up a storm!
Princess Cassi has always had friends that are Geminis, so I have lots of experience with this sign. In fact, her college roommate and “the boy” are both Geminis! She is a Gemini magnet!! They are some of the best storytellers, and perfect to invite to parties. No awkward silence when they are around.
Gemini runs from May 21st – June 21st. Their ruling planet is Mercury. Their element is Air, and their Key Phrase is “I think”. Sometimes they think too much!
Celebrity Geminis include, Angelina Jolie, Johnny Depp, Donald Trump, Courtney Cox, Liam Neissen, and Russel Brand! I know, he’s insane, but he would be awesome as a dinner guest!! We will just have to pretend that the Mahi Mahi with Papaya Mango Salsa is vegan, okay? 😉

The Tostada with the egg was so much prettier! 😉 They are even baked and not fried, so I should get to keep my egg, lol
How to make Artichoke and White Bean Salad
Start by mixing the beans, onions, and artichoke hearts together in a large bowl.
Whisk the dressing together, and pour it over the bean mixture…..
Toss together to combine, then add the spring mix…..
and toss everything together. Refrigerate for 30 minutes before serving to allow the flavor to meld and get happy! I told you that it was super easy to make. 🙂
Cannellini Beans {White Beans} are an excellent source of molybdenum. They are a very good source of folate, dietary fiber, and copper {anti-inflammatory}. White beans are a good source of manganese, phosphorus, protein, vitamin B1, iron, potassium, and magnesium.
They are also have a low GI index, so they metabolize slowly, and provide steady energy for hours after eating them.

Artichoke and White Bean Salad
Ingredients
- 15 ounce can white beans* drained and rinsed
- 9 ounce package frozen artichoke hearts thawed
- ½ cup diced onions
- 4 ounces spring mix
Dressing
- 4 Tablespoons fresh lemon juice
- 3 Tablespoons olive oil
- 1 clove fresh garlic pressed or finely minced
- ¼ teaspoon thyme
- sea salt and fresh black pepper to taste
Instructions
- In a large bowl, combine beans, onions, and artichokes.
- Pour in the dressing and stir to combine.
- Add the lettuce and toss to thoroughly coat.
- Refrigerate for 30 minutes before serving.
Notes
Russell Brand would be an awesome dinner guest — I wouldn’t be able to stop laughing! This salad sounds so good — I love the sound of artichokes and white beans in a salad!
I’m pretty sure that there would be some choking on food, but it would be so worth it. 😉
