I woke up this morning with a brilliant idea to create Bailey’s Cookie Balls, but that didn’t go so well. Apparently, you cannot add 1/4 cup of Baileys to the recipe and not end up with a sticky mess! I added 1/4 cup of powdered sugar….still too sticky. So I added an additional 1/4 cup thinking it would soak up the extra liquid…nope! Change in plans, how about a Boozy Shamrock Shake instead?
I’m pretty sure that you have already figured out that they did not work, lol. Well then, let’s just go ahead and move onto the next recipe on the list…..Boozy Shamrock Shake! When I see a recipe that calls for peppermint extract, my brain sees peppermint schnapps!! Not for the alcohol content, but for the intense mint flavor that does not taste like toothpaste…..
They say that a pictures says a thousand words, well I only needed that photo to say one…..Vegan! I have included instructions for both, so I needed images for both. ๐
How to make a Boozy Shamrock Shake:
For the vegan option we are using Vanilla Coconut Milk Ice Cream and canned, full-fat coconut milk {make sure you shake the can before you open it}…..
If you don’t get a chance to make your ice cream ahead of time, this works great in a pinch. You just need to set it out on the counter for 20 to 30 minutes to soften.
Place the vanilla ice cream, milk, peppermint schnapps, and gel food coloring in a blender…..
Blend until smooth and creamy. Pour into 1 large glass with 2 straws, or 2 smaller glasses and top with whipped cream {Coconut Whipped Cream} and decorative sprinkles…..
Those decorative straws are really cute and great for photos, but they are completely useless to actually drink with!! Do yourself a favor and grab a real straw. ๐
I used (2) 14.75 ounce Goblets in these photos. In reality, this shake should be divided into (4) smaller glasses…..according to official serving sizes. We all know how many of us actually follow those guidelines, right?

Boozy Shamrock Shake
Ingredients
- 2 Cups vanilla ice cream softened - I used coconut milk ice cream
- 1/3 cup whole milk I used full-fat coconut milk in a can
- 4 Tablespoons 101 proof peppermint schnapps
- green gel food coloring
- whipped cream I used coconut whipped cream
- decorative sprinkles
Instructions
- Allow ice cream to soften on the counter for 20 to 30 minutes.
- Place ice cream, milk, schnapps, and green coloring in a blender.
- Blend until smooth and creamy.
- Pour into one large glass or divide between 2 smaller glasses. Top with whipped cream and decorative sprinkles.
- Serve with a straw.
