Slow Cooker Shredded Barbecue Chicken

How often do you use your slow cooker? I don’t remember my mother ever using a slow cooker, except to keep food warm at dinner parties. Isn’t it funny what you remember from your childhood and what you forget? Obviously, I never used one while my kids were growing up, I just didn’t know what I was supposed to do with it…..
Which would explain why this Slow Cooker Shredded Barbecue Chicken comes seven months after my Slow Cooker Lasagna, lol
When my kids were growing up, I would bake the chicken in the oven and toss it with barbecue sauce to create these delicious sandwiches…..
but I have to say, the slow cooker version was much easier!! I was busy looking through boxes last weekend and didn’t want to “keep an eye on dinner”, so it was slow cooker to the rescue. 🙂
How to make Slow Cooker Shredded Barbecue Chicken:
Pour the barbecue sauce, bourbon, mustard, brown sugar, and Worcestershire sauce into the pot and stirred it all together…..
Then I added my chicken – I used 1 1/2 pounds of boneless, skinless thighs & 1 1/2 pounds of boneless, skinless breasts, but starving college students can use all chicken breasts ;)…..
Mix it together to coat the chicken, put on the lid and set it for 3 to 4 hours on HIGH or 6 to 8 hours on LOW…..
I checked to see if the chicken would pull apart at 3 1/2 hours, and it was ready!!! Simply shred the chicken using two forks…..
Toss it back into the barbecue sauce and stir to thoroughly coat with sauce…and voila’…dinner is almost ready.
To make Shredded Barbecue Chicken Sandwiches:
Toast Hamburger Buns, then top with Slow Cooker Shredded Barbecue Chicken and Apple Coleslaw…..
and serve with lots of napkins!! 🙂
Notes:
- I created this recipe with college kids in mind, so I used my favorite store bought Bourbon and Brown Sugar Barbecue Sauce. If you would prefer to make your own at home, just click on the link.
- Why did I add bourbon? I kept coming across recipes calling for Italian dressing, but I wasn’t looking to add an additional flavor, I just wanted to enhance it. 😉
- If you do not want to use alcohol {or are too young to purchase it}, substitute your favorite sauce or try this Tangy and Sassy Barbecue Sauce.
- A little trick….pour the bourbon into the empty barbecue sauce jar and swirl it around to get every last drop…..

Slow Cooker Shredded Barbecue Chicken
Ingredients
- 2 cups Bourbon Brown Sugar Barbecue Sauce
- 2 Tablespoons Dijon mustard I used country-style
- 1 Tablespoon Worcestershire sauce
- 2 Tablespoons brown sugar
- ⅓ cup bourbon whiskey
- 3 pounds boneless, skinless chicken (I used 1 1/2 pounds breasts & 1 1/2 pounds thighs)
Instructions
- Stir barbecue sauce, bourbon, brown sugar, mustard, and Worcestershire together in the bowl of a slow cooker.
- Add the chicken, stir to coat.
- Cook on HIGH for 3 to 4 hours or on LOW for 6 to 8 hours.
- Shred the chicken and mix with barbecue sauce.
- Use to make sandwiches or pizza.
