Superfoods Salad

This Superfoods Salad is loaded with nutrient-dense ingredients like kale, cabbage, Brussels sprouts, dried cherries, and sunflower seeds and topped with Sweet Onion and Citrus Dressing.

Recipe Inspiration

I mentioned the other day that I had grabbed a couple of Dole Salad Kits at the grocery store, then I took my favorite parts of each of them and combined them into one big ‘ol Superfoods Kale Salad and tossed it with a copycat version of sweet onion and citrus dressing!

If there are any ingredients that you do not like, simply substitute ingredients that you do like…as long as your substitution is a vegetable!

To make this delicious Superfoods Salad you will need:

  • Kale, that I chose to chop into little pieces {Vitamin A, C, K, magnesium, fiber, iron, and potassium}
  • Red cabbage, thinly sliced or chopped {Vitamin C, B-5, B-6, B-1, K, potassium, manganese, iron, and magnesium}
  • Romaine lettuce, thinly sliced {Vitamin A, Vitamin C, Omega 3 fatty acids, potassium, and magnesium}
  • 2 large carrots, shredded {Beta-carotene (Vitamin A), Vitamin C, potassium, magnesium, and antioxidants}
  • Thinly sliced Brussels sprouts – I used a mandolin to get them paper thin (Vitamins A, C, K, and high in Fiber)
  • 1 bunch of green onions, sliced
  • Dried cherries or cranberries, just make sure you find some that do not contain added sugar if you are making your salad Paleo (Cherries are very high in potassium and antioxidants, and are low on the glycemic index)
  • Roasted sunflower seeds or pepitas (pumpkin seeds) for crunch.

How to make a Superfoods Salad

Now that is one healthy salad, and a delicious way to get more vegetables into your/my diet. I have no idea why, but it is much easier to load up on vegetables when they are mixed into soups (like Roasted Red Pepper, Roasted Cauliflower and Garlic, and Roasted Carrot) and salads, like this super delicious Asian Sesame Chicken Salad.

Recipe Notes & Tips

  • If you want to load your Superfoods Salad up with even more vegetables; add broccoli florets, green cabbage, toasted walnuts, almonds, blueberries, and avocado chunks. The possibilities are endless!
  • If your kids want a different type of salad dressing, you should try Homemade Ranch (always a favorite), Creamy Cilantro Lime, or Italian.

I chose not to add a protein to this salad so it would remain vegan, but shredded chicken (especially Instant Pot Salsa Verde Chicken or Broiled Salmon) would be a delicious addition for a main course salad.

Ingredients

  • 2 cups kale (washed and chopped)
  • 2 cups romaine lettuce (washed and thinly sliced)
