This Watermelon Pina Colada is a refreshing summer cocktail made with frozen watermelon, white rum, pineapple juice, and coconut milk. It is the perfect, easy rum drink to serve at your next BBQ or pool party!

If you love pina coladas as much as I do, you are in for a treat! This four-ingredient cocktail is simple to make, and I even have a trick for making it ahead of time so you can be ready to sip on icy cold summer in a glass anytime of the year.

What you will need

Ingredients to make Watermelon Pina Colada.
  • Frozen Watermelon – cut fresh watermelon into 1-inch chunks and place in a zipper top freezer bag. Squeeze out the air and place in the freezer overnight.
  • Pineapple Juice – Chill canned or fresh pineapple juice overnight.
  • White Rum – I used Bacardi Superior, it is the official rum for pina coladas, but any good quality white rum will work.
  • Coconut Milk – Unlike traditional pina coladas, this version uses canned, full-fat coconut milk that you can find in the International section of your grocery store. The traditional Coco Lopez cream de coconut is sweetened, but this drink does not need any additional sugar. The watermelon and pineapple juice add just the right amount flavor and sweetness.
  • Garnish – cut pineapple wedges and the pineapple leaves, a large watermelon wedge or slices cut into shapes with small cookie cutters like the stars above are all good options.

How to make frozen pina colada with watermelon

Add the frozen watermelon, rum, pineapple juice, and coconut milk to a blender.

Blend/Puree ingredients together until smooth. Pour into cocktail glasses and garnish. Serve immediately.

Do I have to freeze the watermelon?

Why aren’t you using cream of coconut?

Cream of coconut (Coco Lopez) is a thick, heavily sweetened, processed coconut milk product that resembles condensed milk. Personally, I find this drink sweet enough just the way it is. Feel free to substitute cream of coconut for the unsweetened coconut milk if you prefer a sweeter cocktail, or you could add simple syrup to the coconut milk.

Yes, you can make the recipe ahead of time and place in freezer-safe containers or zipper top freezer bags and place in the freezer until needed. This is also a great way to save leftover cocktails.
