Pina Coladas have been a favorite drink of mine since high school, and I love creating fun new flavor combinations! And seriously, who can pass up a bag of delicious summer cherries? I knew it would be a match made in heaven!!

With the extra cherries you have on hand you can make Cherry Almond Crisp, Baked Cod with Cherry Salsa, Cherry Bourbon Barbecue Sauce, or a Cherry Moscow Mule!

Cherry Pina Colada Ingredients:

  • clear Bacardi rum
  • pineapple juice – fresh or canned works perfectly.
  • cherry simple syrup – it is simple to make and definitely better when made the day before.
  • Coco Lopez cream of coconut – this is the sweetened coconut cream in the liquor department, not the unsweetened type in the Asian food section.
  • heavy cream to make it frothy and creamy.
  • fresh cherries for even more flavor and texture.
  • ice cubes

Recipe Notes & Tips

  • For best results, use a really good blender that can crush ice!
  • Cream of coconut is a thick, heavily sweetened, processed coconut milk product that resembles condensed milk. It is originally produced by the Puerto Rican company Coco López and can be found in the liquor department in most grocery stores.
  • If fresh cherries are not available substitute frozen.
