Is it hot where you are? It is 107 degrees here in Arizona today and the last thing that I want to do is turn on the oven! Last year I grilled as much food as possible, like Grilled Chicken Teriyaki Bowls and Grilled Pizza Margherita.

This Simple Pot Roast with Carrots and Squash is on the heavier side for a summer meal, but it makes excellent sandwiches.
In fact, this would be easy to turn into Barbecue Beef Sandwiches…just skip the carrots, celery, and squash….add barbecue sauce and at least 1/2 of water or broth to the bottom. I will have to give that a try this week!! Update: I gave it a try, and here is the recipe for Barbecue Beef Sandwiches…they are amazing!!
