While a traditional Bellini would be made with peaches, I love the color of this raspberry version! I also added a couple extra ingredients to make it extra special.

Raspberry Bellini Ingredients:

A bowl of fresh raspberries and bottles of prosecco, Cointreau and Chambord.
  • Fresh or frozen raspberries (thawed), whatever you have on hand.
  • Prosecco in keeping with Italian tradition – yes you can substitute Champagne if you prefer.
  • Chambord – raspberry liqueur for an added boost of flavor.
  • Cointreau to give an added flavor to support the raspberry flavor.
  • Simple Syrup (not shown) if you are looking for a sweeter drink.

How do you sweeten a Raspberry Bellini?

To sweeten your cocktail, add .5 teaspoon of Simple Syrup to each glass, or add two tablespoons of fine sugar to the raspberries before they are pureed.

What is the difference between a Bellini and a Mimosa?

A Bellini is made with pureed fruit while a Mimosa is made with fruit juice.

How do you store leftover Prosecco?

Place a a silicone wine stopper into the bottle. Place the wire cage back on the bottle and tighten to hold the stopper in place. Use within a day or two for best results.
