Slow Cooker Barbecue Beef Sandwiches

Slow Cooker Barbecue Beef Sandwiches are perfect for this month’s Virgo picnic meal. I served beef for last year’s Cooking with Astrology “Virgo” meal, but I decided to keep the same protein this year as well because these sandwiches needed to happen. I might change things up next year, but you just never know.

How to make Slow Cooker Barbecue Beef Sandwiches:
Start by mixing the Spice Rub together…..
Then sprinkle the rub on all sides of the beef roast…..
*Warning* this spice rub has a kick to it! It’s not overly spicy, but small children might not be thrilled with it. Use less chili powder for less heat, or use less rub. 🙂
Place the roast in the slow cooker…..
Put on the lid and cook on HIGH for 6 hours, or LOW for 8 hours…..
Come back and find this super delicious beef just waiting to be shredded…..
No, I did not add any liquid before I cooked the roast! Remove the roast to a large plate or baking sheet and shred with two forks…..
Discard the liquid and return the shredded beef to the slow cooker…..
Add 1 cup of Tangy & Sassy Barbecue Sauce {or sauce of your choice} and cook for an additional 30 to 60 minutes…..
Slice your Homemade Hamburger Buns in half, and toast in a cast iron skillet. Place a scoop of barbecue beef on the bun…..
and serve with additional barbecue sauce on the side. I wrapped my sandwiches in foil…..
for easy transport. It also helped keep all of the barbecue sauce from running down my arms! 😉 Don’t forget to bring along some Wet Nap hand wipes in your basket!
You also need a blanket to sit on, a couple of pillows to lean against, and some large plates of a tray to keep your food from falling over! 🙂 No one wants their Blackberry Passion Tea Lemonade to spill and ruin their new blanket…or soak their imaginary date!

Slow Cooker Barbecue Beef Sandwiches
Ingredients
Spice Rub
- ½ Tablespoon chili powder
- ½ Tablespoon garlic powder
- ½ Tablespoon onion powder
- ½ Tablespoon brown sugar
- 3 pound beef chuck roast trimmed
- 1 cup barbecue sauce*
- 12 hamburger buns
Instructions
- Mix spice rub ingredients together in a small bowl, set aside.
- Sprinkle spice rub over all sides of the beef chuck roast.
- Place roast in slow cooker, and cook on HIGH for 6 hours or LOW for 8 hours.
- Shred beef with two forks and return to the slow cooker.
- Mix in the barbecue sauce and cook for an additional 30 to 60 minutes.
- Store left over barbecue beef in the refrigerator for up to a week.

I love shredded slow cooker sandwiches! We usually do chicken but my family would love me for beef!!
I never use my slow cooker because I don’t have a timer and even without one everything always seems to be overcooked. Any ideas? Would like to try this recipe.
