Do you know what the worst part of Whole 30 was last month? No Mochas!! A few friends and I tried to come up with a compliant version using date syrup, but it just didn’t seem right. It felt like it would be cheating, and the carb count on date syrup is really high. To be honest, it is one of the main reasons why I switched to Keto! So the first thing I did was create the perfect Keto Caffè Mocha…..

A thick and creamy Keto Caffè Mocha that is sugar-free, low-carb and delicious!! Well here it is, and this Keto Caffè Mocha is now the perfect way to start to my day!

How to make a Keto Caffè Mocha:

Add the cocoa powder, fiber power, stevia, and salt to a 16 ounce mug.

Pour in the espresso and vanilla extract, stir to combine.

Add half of the steamed milk and the ghee to the mug. Stir until all of the powder is dissolved…..

Add the remaining milk and foam, stir to combine and serve…..

Yes it is very different from what you are used to, that’s the whole point! Even though it is different, it is delicious and quite satisfying. 🙂

  • The Fiber Powder listed in the recipe is actually COBIONIC Foundation – Prebiotic Blend. It makes this mocha thick and creamy, adds some sweetness and a dose of fiber.
  • When first using the fiber powder I highly suggest that you start with 1 Tablespoon and work up to the one scoop serving size (just under 2 Tablespoons).
  • It is fiber powder for a reason, it will clear out your system!!
  • I used Unsweetened Cocoa Powder because it has less carbs than Cacao Powder. It also has a deeper, richer taste…at least to me.
  • Adding Stevia Powder adds another layer of sweetness without adding any carbs.
  • I used Ghee because I am severely allergic to coconut! Feel free to substitute coconut oil or coconut cream if you prefer.
  • Califia Farms Unsweetened Vanilla Almond Milk does not contain carageenan or guar gum. Feel free to substitute homemade almond milk.
  • If you do not have an espresso machine at home, you can substitute double-strength brewed coffee.
  • Most espresso machines sold for home use do not have enough power to steam milk. You can “froth” heated milk with a hand blender or pour your mocha into a high speed blender to mix it up.

^^^ This is what the COBIONIC Foundation fiber powder looks like^^^ It is mixed berry flavor, but I don’t taste berries at all.

This is what 1/32 teaspoon of stevia looks like. A little goes a long way, and too much will make your drink very bitter!

Tools used to create this recipe:

Lelit Commercial Espresso Machine – I actually have the Diana but it has been discontinued.

Coffee Grinder – grinds the beans perfectly for espresso!

Black Rifle Espresso Beans – they also sell Just Decaf beans on their website

Milk Steaming Pitcher

This De’Longhi Espresso Machine is also a good machine, they just don’t hold up well when used every day.

Ingredients

  • 1 Tablespoon cocoa powder
  • 2 Tablespoons COBIONIC Foundation fiber powder start out with 1 tablespoon until you get used to it
  • 1/32 teaspoon stevia powder
