Taco Salad

The temperatures are rising and life just seems to keep getting busier! Thankfully this Taco Salad is a quick and easy meal that can be thrown together in less than 30 minutes. I kept things super simple by topping my Taco Salad with ground beef and a simple salsa ranch dressing. If you have a Mason jar, you can make ranch dressing! {This post contains affiliate links}
Not only is this Taco Salad simple, it is also gluten-free and keto friendly.
How to make Taco Salad with Ground Beef:
Heat a large skillet over medium-high heat. Add the ground beef and break it apart with a wooden spoon or spatula.
Sprinkle the taco seasoning over the beef and stir to combine.
Continue cooking until the meat is no longer pink. Remove from heat and allow to cool. (adjust seasonings if necessary)
Combine the lettuce, tomatoes, avocado, onion, cheese and cilantro in a large bowl.
Add the ground beef and dressing, toss to thoroughly combine. Serve with tortilla or cheese chips if desired.
Mildly spicy, somewhat creamy, definitely crunchy and totally delicious! Keeping all of the toppings on top is impossible!!
Notes:

- Feel free to add your favorite toppings; corn, black beans, olives, jalapenos.
- If you only need one or two servings, do not toss with the dressing. Serve dressing on the side so the salad does not get soggy.

- 1 pound ground beef
- 1 ½ Tablespoons taco seasoning add more if desired
- 6 cups romaine lettuce chopped - 2 heads/bunches
- 1 pint grape tomatoes cut in half - substitute cherry or diced Roma tomatoes
- 1 large avocado diced
- ⅓ cup green onions sliced
- 1 ½ cup sharp cheddar cheese shredded
- ¼ cup cilantro chopped
- cheddar or tortilla chips optional
Salsa Ranch Dressing
- ½ cup ranch dressing
- ⅛ cup salsa
Instructions

Salsa Ranch Dressing
- Add the ranch dressing and salsa to a glass jar. Secure the lid and shake to combine.
- Store unused dressing in the refrigerator for up to one week.
