Pineapple Daiquiri Sorbet

Raise your hands if you are ready for sunshine and warmer temperatures! I am not quite prepared for full-blown Arizona summer temperatures, but I would like for the rain to stop so the weeds will stop growing, LOL. Until that happens, I will continue to dream of an island paradise of sand, surf, and Pineapple Daiquiri Sorbet…..
I don’t think they actually serve Pineapple Daiquiri Sorbet in Hawaii, but they really should. It’s like a Dole Whip for adults, with rum instead of whipped cream. 😉
How to make Pineapple Daiquiri Sorbet:
It’s super easy to make, not so easy to photograph. I used a fresh pineapple that I peeled, cored, and cut into chunks…..
Place all ingredients into a blender and blend until smooth…..
I swear that was 4 cups of pineapple chunks before I put it into the blender! Place mixture in the refrigerator and chill for at least one hour.
Pour mixture into a frozen canister for your ice cream maker, and process according to manufacture’s instructions. {about 20 minutes}…..
Serve immediately for a soft serve consistency. For a more typical, scoopable consistency, freeze for 3 to 5 hours…..
As usual, I did not have the patience or the daylight to wait for my Pineapple Daiquiri Sorbet to freeze completely before taking the pictures. I know, you’re totally shocked right now. 😉 At this point, you could actually drink it through a straw as a Pineapple Daiquiri.
Notes:
I could not taste the rum at all. I was too afraid to add too much and then not have it freeze, so I stopped at 4 Tablespoons.
If you would like to serve your Pineapple Daiquiri Sorbet in a pineapple boat like I did…stand up your pineapple and slice down the front right before the spiky part, then cut a border around the inside…..
Use a large spoon to scoop out the inside of the pineapple, just make sure you don’t go all the way down to the skin…or through it. 😉
I poured my sorbet in after I let it freeze for a couple of hours…..
I do not have any room in my pull-out drawer freezer, and didn’t want to risk it falling over and spilling all over the bottom…that would be my luck.

Ingredients
- 4 cups fresh pineapple chunks
- ½ cup superfine sugar
- 4 Tablespoons light rum
- 2 Tablespoons fresh lime juice
Instructions
- Place all ingredients into a blender and blend until smooth.

Your pineapple daiquiri sorbet looks so yummy. I have made watermelon sorbet and use Vodka in it. Also made mango sorbet. I need to try your pineapple one.
