Fresh Berries Cookie Pizza

This delicious and festive red white and blue fresh berries cookie pizza is easy to make and would be a perfect addition to any summer bbq or picnic! Sugar cookie crust topped with lemony cream cheese and mounds of juicy berries is the perfect patriotic treat.
I’m sure you have all seen versions of cookie pizzas at those kitchen parties, right? Do any of you have the original recipe for that cookie pizza? Well I cannot for the life of me find the silly recipe, so I had to get creative. I am so glad that I did, this Fresh Berries Cookie Pizza is even better than the ones I remember!!
The first change that I made, was making the sugar cookie from scratch rather than a tube from the refrigerator section. Next I decided against bananas, mandarin oranges and chocolate syrup on this pizza, sorry, LOL
What you will need:
- sugar cookie dough – from scratch or store-bought.
- cream cheese
- granulated sugar
- lemon zest
- your choice of mixed berries – I chose strawberries, raspberries, blueberries, and blackberries.
How to make Fresh Berries Cookie Pizza:
I made the cookie dough, chilled it in the refrigerator, then rolled {as evenly as possible} the entire batch of dough out into a giant 13-inch cookie and placed it on a parchment paper lined baking sheet.
I wanted the crust to be thick enough to hold up all of those delicious berries without breaking!! Bake in a preheated 400 degree oven for about 20 minutes, or until light, golden brown.
Set cookie aside to cool completely.
In the meantime, go ahead and wash, drain, and dry your selection of fresh berries. Try not to eat all of the yummy berries while they are sitting on the counter, we will need them later.
In a large bowl, beat together the cream cheese and sugar until smooth and creamy. Add the vanilla and lemon zest, and beat to combine.
The lemon zest adds a bright burst of flavor to the cream cheese frosting, and pairs perfectly with the berries. Spread the frosting on the cooled cookie.
Then comes the hard part, the design!! I had a really cool design in my head that did not translate to the cookie pizza. So I removed the berries and tried again….yeah, this is not going to happen. I finally through caution to the wind {and closed my eyes} and scattered the berries over the top of the cookie.
Chill until ready to serve, then slice and enjoy.

Fresh Berries Cookie Pizza
Ingredients
- 1 batch sugar cookie dough chilled
- 8 ounce package cream cheese softened
- .25 cup granulated sugar
- 1 tablespoon fresh lemon zest
- 1 teaspoon pure vanilla extract
- 4 cups mixed fresh berries (rinsed, drained, and dry)
Instructions
- Preheat oven to 400 degrees. Place a sheet of parchment paper on a baking sheet, set aside.
- Remove chilled cookie dough from the refrigerator and roll out to a 13-inch circle. You want the dough to be as even as possible so it cooks evenly.
- Place on prepared baking sheet and bake for 20 minutes, or until golden brown.
- Remove from oven and allow to cool completely.
- In a large bowl beat cream cheese and sugar together until smooth and creamy.
- Add the vanilla and lemon zest, beat to combine.
- Spread frosting over cooled cookie.
- Arrange the berries over the pizza in any pattern you choose.
- Chill until ready to serve. Refrigerate unused portions for up to 3 days.
