This delicious Cilantro Lime Shrimp is so versatile it works as an appetizer, a main course, or the perfect addition to a salad. I served my Cilantro Lime Shrimp as part of an appetizer/wine party this past weekend, and it was a huge hit! It has the perfect combination of tang from the lime and cilantro, with a touch of heat from the cayenne…..
My original plan was to cook them on the grill, but it just won’t stop raining!!! So it was into the oven just before my guests arrived.
How to make Cilantro Lime Shrimp:
Mix the oil, cilantro, garlic, lime juice and zest, cayenne, salt and pepper together in a large bowl…..
add the peeled and deveined shrimp {and the cilantro if you forgot it}…..
Mix together to coat the shrimp, then cover with plastic wrap and marinate for 30 minutes.
Preheat oven to 425 degrees, or preheat the grill. If you are using a grill, soak wooden skewers for 30 minutes before you use them. You won’t need to soak them if you are using the oven. 😉
Slide the shrimp and lime wedges {if using} onto the skewers and place them on a rimmed baking sheet…..
Bake or grill for 8 to 10 minutes, until thoroughly cooked and no longer opaque…..
Serve with the skewers, or slide shrimp off into a bowl if serving to small children…they like to use them as swords at the dinner table!
