My original plan was to cook them on the grill, but it just won’t stop raining!!! So it was into the oven just before my guests arrived.

How to make Cilantro Lime Shrimp:

Mix the oil, cilantro, garlic, lime juice and zest, cayenne, salt and pepper together in a large bowl…..

add the peeled and deveined shrimp {and the cilantro if you forgot it}…..

Mix together to coat the shrimp, then cover with plastic wrap and marinate for 30 minutes.

Preheat oven to 425 degrees, or preheat the grill. If you are using a grill, soak wooden skewers for 30 minutes before you use them. You won’t need to soak them if you are using the oven. 😉

Slide the shrimp and lime wedges {if using} onto the skewers and place them on a rimmed baking sheet…..

Bake or grill for 8 to 10 minutes, until thoroughly cooked and no longer opaque…..

Serve with the skewers, or slide shrimp off into a bowl if serving to small children…they like to use them as swords at the dinner table!

Ingredients

  • 2 Tablespoons olive oil
  • 2 Tablespoons chopped cilantro
  • 2 medium limes juice and zest
  • 2 cloves garlic minced
  • 1/16 teaspoon cayenne pepper
  • sea salt and ground pepper to taste
  • 1 pound 16 to 20 count shrimp peeled and deveined
  • 4 skewers
  • additional limes cut into wedges

Instructions

  • Preheat oven to 425 degrees, or preheat grill. If using a grill, soak wood skewers for 30 minutes.
  • Mix oil, cilantro, lime juice and zest, garlic, cayenne, salt and pepper together in a large bowl.
  • Add shrimp and stir to combine.
  • Cover with plastic wrap and allow to marinate for 30 minutes.
  • Slide shrimp onto skewers.
  • Place skewers on a rimmed baking sheet and place in preheated oven.
  • Bake for 8 to 10 minutes, until cooked through and no longer opaque.
  • Serve with or without skewers.
