Springtime Chocolate Covered Popcorn

The calendar says Spring, but the thermometer says Summer! Not that I am complaining, but I figured I better get this Springtime Chocolate Covered Popcorn recipe out of my head and into the blogishere before it’s time to start creating ice cream recipes again, LOL. Not that you will need a hot oven to create this delicious snack…..
,just a microwave and some patience. Waiting for the melted chocolate to cool is torture, and this Springtime Chocolate Covered Popcorn is covered in 5 layers of pastel colored chocolates, sprinkles, and candies. Holy sugar rush Batman!!
No, this recipe is not Paleo, Whole 30, or any kind of healthy. But it is totally delicious, so keep reading. Everything in moderation, right? 🙂
How to make Springtime Chocolate Covered Popcorn:
Place the popped popcorn into a LARGE bowl, set aside…..
Place the candy melts in a microwave safe bowl. Heat on HIGH for one minute, stir and heat for an additional minute. Stir and continue heating and stirring in 15 second intervals until the candy is melted and smooth. {This is the base color} Pour over the popcorn and gently stir to completely cover…..
Spread the popcorn mixture out on a parchment paper or Silpat lined baking sheet. Set aside to cool…..
Place 1 1/2 ounces of colored candy melts into separate bowls…..
Melt each bowl for 1 minute, stir until smooth and drizzle over popcorn…..
Sprinkle with the pastel colored candies and decorative sprinkles…..
Set aside to cool completely, then break apart and serve…..

- I used Wilton Candy Melts® in Bright White for the base, then Bright Pink, Lavender, Blue, and Yellow. Feel free to use any color combination that you like.
- I used these Colorful Egg Sprinkles because I wanted the look of green grass, but any decorative sprinkles will work.
- I mixed half of the sprinkles with the base color, but it just blended in with the white chocolate.
- I make my popcorn by placing 1/3 cup of popcorn kernels in a paper bag, fold over the top to close, then cook in the microwave for 3 1/2 minutes {or use the Popcorn Button}.
- Make sure you use the largest bowl you can find to mix the chocolate with the popcorn!!! Those giant Tupperware bowls are perfect.
- Each bag of Candy Melts is 12 ounces, so you will need 1 full bag and part of a second bag for the base color.
I chose to not name this Springtime Chocolate Covered Popcorn something cute like Bunny Bait, because it is fun and delicious enough to be eaten anytime of year.

Springtime Chocolate Covered Popcorn
Ingredients
- 15 cups popped popcorn about 1 cup before popping
- 16 ounces Wilton Candy Melts® I used Bright White for the base color
- ½ cup decorative sprinkles
- 6 ounces Wilton Candy Melts® in pastel colors I used 1 1/2 ounce per color
- ½ cup Spring colored chocolate covered candies
Instructions
- Place the popped popcorn into a LARGE bowl, set aside.
- Place the candy melts in a microwave safe bowl. Heat on HIGH for one minute, stir and heat for an additional minute. Stir and continue heating and stirring in 15 second intervals until the candy is melted and smooth. {This is the base color}
- Pour over the popcorn and gently stir to completely cover.
- Spread the popcorn mixture out on a parchment paper or Silpat lined baking sheet. Set aside to cool.
