You will need a 6.5-inch cast iron skillet, okay? {affiliate link} Great, let’s get baking.

How to make Skillet Brownies for Two:

Preheat oven to 350 degrees. Lightly grease (1) 6.5-inch cast iron skillet, set aside.

Place the chocolate chips, unsweetened chocolate, and oil in a large microwaveable bowl. Heat on HIGH for 30 seconds, stir, and heat for an additional 30 seconds. Stir until all the chocolate bits are melted, set aside.

Beat the egg, vanilla, and sugar together in a small bowl…..

Add a small amount of the melted chocolate mixture and whisk to combine.

Slowly pour the egg mixture into the chocolate mixture while whisking until thoroughly combined.

Recipe Notes & Tips

  • All oven cook differently, but my Skillet Brownies for Two were perfect at 26 minutes.
  • I used bittersweet chocolate chips because I do not like super sweet chocolate. Feel free to substitute your favorite chocolate chips.
  • I tried this recipe will unsalted butter and with safflower oil, and preferred the texture with the oil over the butter…but that ‘s just me, use whichever you prefer.

Ingredients

  • ¼ cup safflower oil
  • 2 ounces chocolate chips (I used bittersweet)
  • ¾ ounce unsweetened chocolate
  • 1 extra-large egg
  • ¼ cup plus 1 Tablespoon granulated sugar
  • 1 teaspoon pure vanilla extract
  • ¼ cup all-purpose flour
  • ½ teaspoon baking powder
  • teaspoon fine sea salt
  • ¼ cup semisweet chocolate chips
  • ½ Tablespoon all-purpose flour
