Skillet Brownies for Two

Have you ever found yourself craving something ooey, gooey, and chocolaty? Something rich and delicious, but you don’t want to eat a whole big pan of this chocolaty creation by yourself? Me too, That’s where the Skillet Brownies for Two come in! All of the gooey deliciousness that you are craving, in a cute little skillet to help control overindulgence.
I said help control overindulgence, I never said that these yummy Skillet Brownies for Two would not be topped with vanilla ice cream! 😉 Yes, technically this recipe serves two people…and no, you do not have to share if you don’t want to, LOL
You will need a 6.5-inch cast iron skillet, okay? {affiliate link} Great, let’s get baking.
How to make Skillet Brownies for Two:
Preheat oven to 350 degrees. Lightly grease (1) 6.5-inch cast iron skillet, set aside.
Place the chocolate chips, unsweetened chocolate, and oil in a large microwaveable bowl. Heat on HIGH for 30 seconds, stir, and heat for an additional 30 seconds. Stir until all the chocolate bits are melted, set aside.
Beat the egg, vanilla, and sugar together in a small bowl…..
Add a small amount of the melted chocolate mixture and whisk to combine.
Slowly pour the egg mixture into the chocolate mixture while whisking until thoroughly combined.
Stir in the flour, baking powder, and salt.
Mix 1/4 cup of chocolate chips with 1/2 a Tablespoon of flour.
Add to the brownie batter and stir until until combined. Pour the mixture into the prepared skillet.
Bake for 26 minutes*, do not overbake! A toothpick will not come out clean when inserted into the brownie.
Serve while warm with a scoop of ice cream.
Oh ya, that definitely hit the spot!!
Recipe Notes & Tips
- All oven cook differently, but my Skillet Brownies for Two were perfect at 26 minutes.
- I used bittersweet chocolate chips because I do not like super sweet chocolate. Feel free to substitute your favorite chocolate chips.
- I tried this recipe will unsalted butter and with safflower oil, and preferred the texture with the oil over the butter…but that ‘s just me, use whichever you prefer.
How about a Vanilla Ice Cream {dairy-free} recipe? Mint Chip would also be amazing, I guess I should make so next time! 😉

- ¼ cup safflower oil
- 2 ounces chocolate chips (I used bittersweet)
- ¾ ounce unsweetened chocolate
- 1 extra-large egg
- ¼ cup plus 1 Tablespoon granulated sugar
- 1 teaspoon pure vanilla extract
- ¼ cup all-purpose flour
- ½ teaspoon baking powder
- ⅛ teaspoon fine sea salt
- ¼ cup semisweet chocolate chips
- ½ Tablespoon all-purpose flour

How wonderful to have a recipe for a smaller portion! You can still have the special of freshly made without needing to make a whole family-sized batch!
