This exotic and colorful Dragon Fruit Margarita combines tequila, orange liqueur, lime juice, and a touch of honey with frozen dragon fruit to create the perfect cocktail for those hot summer days!
Not that these delicious drinks can only be enjoyed during the summer, they would be perfect any time of year!

What you will need
- I used frozen red dragon fruit, but you could substitute fresh if you prefer. Your drink will be thicker if you use frozen.
- Honey to add a touch of sweetness, but agave nectar can be substituted for a vegan cocktail.
- Blanco or silver tequila plus Cointreau (orange liqueur) give this drink its smooth kick, while fresh lime juice adds a touch of tart flavor to round out the flavors.
- Ice cubes add the thickness and texture that is expected from a frozen cocktail.

What is dragon fruit?
Pink Pitaya, or red dragon fruit, is a fruit from several species of cactus that are indigenous to South America, Southeast Asia, India, the United States, Australia, the Caribbean, Mesoamerica and throughout tropical and subtropical regions of the world.
It has a delicately sweet, fruity flavor and intensely vibrant color. It is also available in white and yellow varieties. The texture is similar to kiwifruit with tiny, crunchy seeds and has a leathery exterior.
How to make dragon fruit margarita
Rub lime juice around the rim of two margarita glasses. Dip glasses into granulated sugar spread out on a small plate. Set aside.
Place the dragon fruit, tequila, lime juice, orange liqueur, honey, and ice into a blender.
Blend until smooth and thoroughly combined.
Divide margaritas between the two glasses and serve with a straw and lime wedge garnish.
