Watermelon Mojito Recipe

This refreshing Watermelon Mojito recipe is the ultimate summer rum cocktail! Mix fresh watermelon juice with white rum, simple syrup, lime juice, muddled mint leaves, and a splash of club soda together and you will be sipping your way through summer parties and poolside gatherings!

I’m not sure what it is about watermelon, but I just can’t stop turning this delicious summer fruit into cocktails! They are naturally sweet, easy to work with, the color is gorgeous, and you can freeze chunks to have on hand all year long.   • Fresh watermelon cut into chunks, pureed in the blender, then strained into a seedless juice
  • White rum, like Bacardi
  • Simple Syrup just in case the watermelon is not as sweet as expected – adjust according to taste
  • Fresh mint leaves and limes to give us that traditional mojito flavor
  • A splash of club soda to give this fun cocktail some fizz, and keep it from getting too strong
  • A muddler, a citrus juicer, a blender, and a fine-mesh strainer

How to make watermelon mojitos

Watermelon mojitos by the pitcher

Place the watermelon cubes in a blender and puree until smooth and frothy.

Pour the mixture through a fine-mesh strainer into a large measuring cup or pitcher, pressing with a spoon to release all of the juice.

Discard solids and set aside.

Muddle the fresh mint leaves with some crushed ice and lime juice in a cocktail shaker or measuring cup.

Pour the mint mixture, watermelon juice, and simple syrup into a serving pitcher. Stir to combine.

Single serving Watermelon Mint Mojito

Muddle the .25-ounces of lime juice, 1 tablespoon of simple syrup and 4 mint leaves in a cocktail shaker.

Add 1.5-ounces of rum and 0.5 cup of watermelon juice to the cocktail shaker. Fill with ice and shake until well chilled.

Strain into a tall glass with fresh ice and top off with 0.5 cup of club soda.

Garnish with watermelon, lime wedges, and fresh mint sprigs.

Recipe Notes & Tips

  • For icy cold cocktail, use icy cold ingredients. Chill the watermelon juice, simple syrup, and rum in the refrigerator for several hours before hand. Added bonus points if you also chill your glasses as well.
  • The watermelon juice and simple syrups can be made 4 days in advance and stored in the refrigerator until ready to serve.
  • For Watermelon Mojito Mocktails – leave out the rum.
  • You can get extra fancy and strategically add thin lime slices and additional mint leaves to the pitcher before serving.
